She Says: Giambotta (Italian Vegetable Stew)
I was feeling a little bleh in the stomach today after eating one too many handfuls of boredom cheerios at work. I hate when I do that. It’s not like I love cheerios, but they’re so easy to eat. I need to buy some gum instead. Anyway, on the way home I was thinking about I was feeling sick and did not want to eat or cook anything for dinner. How excited was I when I saw my mother made one of my favorites – Summer Vegetable Stew, or Giambotta as my mom and grandma say (or John Both as I say
).
This is something I would not even consider eating as a child, but I absolutely love it now. It’s a perfect way to use up fresh summer vegetables and it made my stomach feel a million times better.
Giambotta Ingredient List
- Olive oil (just enough to cover the pan)
- Garlic
- Garlic Powder
- Salt
- Pepper
- Mint
- Oregeno
- Basil
- Sage
- Hot Pepper Flakes
- Zucchini
- Yellow Squash
- String Beans
- Tomatoes
- Carrots
- Corn
- Potatoes
- Water
If anyone wants more specifics about amounts I can ask my mom. I assure you the resulting descriptions will be hilarious.
Cucumber Melon … Not Just for Lotion
My desire to reduce the number of plastic containers I bring to work meant I put my cantaloupe in with my cucumbers today. What a tasty accident.
Yoga Today
I tried a Forward Bending Class before dinner. Here is the link and the description:
“Create space between your vertebrate, stimulate blood flow & open your hamstrings in a relaxing intermediate-level Ashtanga flow.”
Not my favorite because it wasn’t as flowy as I like, but it did provide a great stretch to my tight runner’s hamstrings. I warn you, the audio in this one isn’t the best because apparently there was some sort of air show or major high way construction project underway during taping.

P.P.S. I’ve heard some people don’t love their iPhones. I want to share that Mark bought me one for my birthday and I love it. It’s really easy and fun to use (coming from someone whose last phone had no internet or camera – just keys and a screen) and has a cool wordpress application. As you can see, I take pictures of everything all the time.

the stew sounds brilliant! i love those kinds of comforting dishes, especially when you didn’t like them as a child – makes you feel mature
i would lovelovelove to get an iphone for my next upgrade (not until next feb, unfortunately).. they sound so good.

hm. how do you feel about the fact that you can’t just dial someone’s number with one hand or that your screen (at least mine does this) sometimes freezes up?
just curious, as I have until Saturday to return it or keep it and its lousy At&t service. If Verizon had the contract I wouldn’t even be asking!

Living in NJ I feel that I get better overall EDGE and 3G network coverage than Heather does in RI. I don’t actually “dial” people very often but when I do it’s usually one handed using the Keypad after double-clicking the home button.
As for the freezing, have you updated to the newer 2.0.1 firmware? Connect to iTunes and click Check for Update. Heather reported this to me in the first couple weeks although I didn’t experience it myself. My guess is that there was/is a memory leak that causes things to freeze up after using many apps from the AppStore or, in general, Safari.
Overall, I love it and use the WordPress application to blog (with pictures included) from… obscure places.

rhodeygirl: I don’t know what you mean. I dial with one hand? The freezing screen is really annoying and I have no idea why it happens. It happens more to me than Mark, so maybe it’s the websites I go to. The benefits – wordpress application, gps, internet, email, fun applications, visual voice mail. outweigh that one problem for me.
Andrea: I was lucky because my T-mobile contract ended only days after the iPhone came out!
