She Says: Oatmeal Chobani Cream Pie

Well aren’t I getting fancy on this Monday morning? 

 

Ingredients:

  • 1/2 cup oatmeal (cooked on the stove or in the microwave – I used leftover oats from the previous day)
  • 1 cup plain
  • Greek Yogurt
  • honey
  • 2 T Flaxseed
  • cinnamon

Directions: It’s actually quite easy. I took leftover chai oatmeal from the refrigerator and flattened it so it formed a “pie crust” with higher edges than the center. I baked it at 350* for about 12 minutes until it was crunchy. I made the “cream filling” with plain Chobani and honey and sprinkled flax and cinnamon on top.  

Definitely going to be doing this again. You know when you have warm pie with ice cream on top and the ice cream melts into it and it’s just the best thing in the world? Well, the cold yogurt does the same thing into the oatmeal. 

Back to School Snacks!

This Thursday I start student teaching, which of course means lunch time snacks! Here are some of the best snacks as chosen by kids ages 3 to 16.  Many of these I’ve never heard of like Kopali Organics Dark Chocolate Covered Mulberries (!) and Good Health Natural Foods Peanut Butter Pretzels (!!), but some are old favorites like Odwalla bars. When I was a kid I always had a sandwich, apple and sweet snack. I had lots of favorite snacks, but two of my favorites were vanilla yogurt with granola and chocolate pudding. What was your favorite lunch box snack?

    I don’t think I knew it at the time but I LOVED a thick, smushy PB&J. Maybe I appreciate it more now b/c if I dare open the PB jar, I OD. Also, Ding Dongs.

    Gorgeous breakfast!!

    My favorite lunch box snack when I was little, was “ants on a log” or homemade applesauce sprinkled with cinnamon. Nowadays, it’s LARABARS!!!! :-)

    I’m so behind in my posts. Good luck with your student teaching. What grade?
    My comments are actually about your previous post, but wasn’t sure if you would see them there. 1st – You didn’t mention the salt aspect in the taste of your cake. Any observations? I’m always curious because I cut back significantly on salt in my cooking dishes but when baking often leave it alone since I know it’s a flavor enhancer and it’s not as easy to taste and adjust raw batter as it is with a savory dish made on the stove.
    Additionally, those husk cherries are interesting. The remind me of tomatillos.

    Wow- that’s an impressive breakfast! You definitely deserve major points for creativity.

    Good luck with student teaching! You know what I remember? Those little Handi Snacks, with the spreadable cheese and crackers. LOVED those- although thinking back, they were pretty gross.

    I’m with HeatherBakes – I loved Handi Snacks!! I also really liked Dunkaroos – they were cookies that came with chocolate or vanilla icing and I think they were in the shape of kangaroos – YUM!

    I liked Dunkaroos as well but I think my favorite lunch box snack was Little Debbie Nutty Buddy bars. Such a great combo of chocolate and PB, obviously not too nutritious – but I love pulling the wafers apart and eating them one by one.

    Wow that breakfast looks very good! When I was younger I ate a lot of those mini bags of chips and fruit roll ups, kidos bars, dunkaroos… even (eww) that squirt cheese… obviously not the healthiest options!

    as a kid, kit kats and yoplait strawberry yogurt were both my favorites. as an adult, stonyfield farms yogurts with berries and cereal yum yum

    You all made me remember more snacks I loved: Kudos Bars, Twinkies, Nutty Buddies (the best!) and Shark Bites. Does anyone remember Magic Middles?

    Jenn, I think the girl at the end of that commercial was Claudia from Party of Five!

    Kelly, I hardly cook with salt, but I do try to add at least a pinch when baking because I think it brings out the other flavors. I just kind of forgot this time and didn’t notice a difference. Usually if I am making something just for fun or to try something healthier, I leave it out. If I am making something for others, I will usually add it. Oh and I’ll be in the 2nd grade! :D
