She Said: V. Excited to Share

Today I feel like one of the children in school who are always excited to share stories or trinkets from home with the class. Today I am excited to share a special part of my lunch that I made last night. 

Hummus, Cucumber, Dried Cranberries and Lettuce on a Whole Wheat Flax Wrap

It’s hummus, cucumbers, lettuce, these very delicious dried cranberries and a flax whole wheat wrap

Kinda boring at first glance, but there are two very exciting things about this sandwich.

First, the dried cranberries I received from Oh! Nuts. Because excitement is the theme of the day, let’s just say I was v. excited about these super plump and soft dried cranberries.

Second, I made that wrap! It was so easy and everyone can do it. I used this recipe for Picnic Wraps from a King Arthur Flour Cookbook, but used whole wheat flour and olive oil and added ground flax. Best part is that if you make it yourself, you know there is no HFCS in there! 

Here is the hot pocket I made for my dad’s lunch using two of the wheat wraps.

    I just got really excited, too, never thought of making my own wraps–awesome!! I wish i could not overstuff my wraps ;-) i don’t think i’ve ever seen such plumpness in my dried cranberres. I’m loving the thanksgiving-themed wrap :)

    Wow! I never thought of making my own wraps. Maybe it will be a good little weekend project. And those cranberries look delicious! Do they have added sugar? I have such a tough time finding the non-Craisin variety.

    Mine were the Craisin type, but Oh! Nuts also has unsweetened organic dried cranberries:

    I was excited about this because every kind I’ve seen in stores has added sugar.

    I just entered that wrap recipe into my MasterCook. It comes out per wrap: 138 calories, 4.75 fat, 21 carbs, 3.6 fiber and 4 protein (if using whole wheat bread dough)

    2 ww points!

    I’m excited!

    That was without the flax. If you added two tablespoons to the whole recipe, that only adds 90 calories, or 10 extra calories per wrap.

    And I agree, you could probably stretch the dough out to get even more!

    Can’t wait to try it!
