She Says: Back on Track & Oatmeal Fig Bars
This morning I woke up feeling bleh with a bloated stomach and all that. It’s not like I ate a whole lot more than on a normal weekend, but almost all my meals were out and I didn’t get in my normal amount of exercise. Mark and I hit the gym on Saturday and we did a lot of walking, so that was good, but still, I felt kinda gross by the end of the weekend.
Today was a fresh start and I was really looking forward to my run. After school I had a reasonable snack of a Granny Smith Apple and these wheat crackers (sweetened by Organic Evaporate Cane Juice and Organic Brown Rice Syrup, not HFCS, CS or F). My reasonable snack turned unreasonable when I decided I was “hungry” and had many, many more crackers.
Anyway, it wasn’t that bad and I ran 8 miles in 68 minutes, which is pretty much the greatest run I’ve ever done! It was just what I needed to get me back on track mentally.
For dinner I had salad and leftover tofu, black beans and squash.
Later, while waiting for the new Nineoh, I used my fresh figs for some baking. I didn’t have a fresh fig because my mom said they were not very sweet and pretty much tasteless. I used the figs to make Oatmeal To Go.
Oatmeal Fig Bars
1 Cup of Chopped Figs
1/2 Cup Grape Juice
1 Cup Water
2 Cups Oats
1 T Milled Flax Seeds
1 T Wheat Germ
Directions:
Boil juice then add figs and lower heat. Mash figs while they cook on the stove. Add two cups of oats and 1 cup of water. Stir ingredients and cook oatmeal for a couple minutes. Turn heat off. Add flax and stir. Put mix into a baking dish (sprayed with olive oil) and sprinkle wheat germ on top. Cook on 350* for 25 mins.
The result is a soft muffin-like bar with a crunchy top. V. delicious.

The Pigs Feet… the “I feel like I’m on cops”….the “I almost ran into her”…the “tuna… IN WATERRRRRR…cause I really need more oil in my diet”. Seriously keep going!! I know this post was from a couple days back, but I had to reply because I am a major fig addict – if they are fresh, ripe, its just perfect. I’ll definitely be trying your oatmeal bar recipe with the figs. Thank you!
