She Says: Cooooookies!
Well friends, my first 5k was scheduled for today, but postponed due to the weather. Next week! Probably better that I get another week to work on getting 100% healthy.
I seized the opportunity to cheer up a sad friend. Since I can’t send ice cream in the mail, I made cookies.
It’s been my experience that receiving a shiny package with a pretty bow instantly improves one’s mood. When she finds cookies inside, I hope she’ll be even more excited.
In the package are Oatmeal (Chocolate Chip) Flax Cookies – Version II
I also made delicious White Chocolate Lime Cookies courtesy of Have Cake, Will Travel.
In an interesting case of role reversal, I subbed the vegan ingredients for non-vegan ingredients. I’m not opposed to vegan ingredients, I just didn’t have them. I highly recommend these cookies for something a little different. The lime flavor is great and they are flaky on the outside and soft in the center. The recipe says it makes 10 medium cookies, but I made 16 small ones instead. I also made an extra batch of dough and froze it for a birthday party next weekend.
Excuse me while I go eat some more cookies.

I often find myself subbing non vegan ingredients for vegan ones as well, primarily because after reading various nutrition books I am not a fan of margarine.

Those lime cookies sound intruiguing. Maybe I’ll give them a try one of these days when I’m feeling extra adventurous.

Heather, in answer to your question… you could try making carrot cupcakes with the roll recipe, but I have not tried it and wouldn’t vouch for it.

Bummer your race was cancelled. The cookies do look yummy! I always sub vegan ingredients for non vegan ingredients, simply becuase I do not have them on hand. I always tell my dad these are the ‘almost vegan’ baked goods

This is tot. beside the point, I know and the cookies look fabulous, but you CAN order & ship ice cream across the country– homemade custom-named & custom-mixed through a shop I worked for called ecreamery (ecreamery.com)–they’re fabulous!

nothing like cookies to put a smile on your face!! i don’t think i’ve ever tried lime in cookies but the white chocolate lime sounds yummy!! so does the dough. haha

I’ve never tried a cookie with lime before but I love anything lime so I’m pretty sure it would be a v. good experience
And gosh I love that apron. Where is mine?! Haha, patience is not one of my strong suits.

Sorry about the race! That’s annoying. But running in the rain (at least during a race) sucks. So is it just rescheduled for next weekend?
The cookies look great! Question- what shipping method do you use? I’d like to send some baked goodies to my out of state friend but I’m afraid that they’ll stale/fall apart before they get there.

Heather: You can send them one or two day though the regular mail. I’ve never had a problem. Yeah, the 5k is Saturday instead.
