She Says: Boring Monday
No complaints. A boring Monday is a good Monday in my book! My momma made some Beaf Barley Soup, but she’s the bomb dot com (oh yes, I did) and made some Veggie Barley Soup for me.
The ingredients for the Veggie Barley Soup are:
Barley
Veggie Broth
Carrots
Brussels Sprouts
Cauliflower
Chickpeas
Stress Eating
I know I sometimes eat mindlessly when stressed or nervous. It’s one of my worst habits. I just read this list of ways to avoid stress eating on Back in Skinny Jeans. My favorite one is to remember that this kind of thing is a habit, and just like any habit it can be broken!

Monday is usually vegetable soup day at our house, too. I prefer to think of it as routine rather than boring.

I am so with you on the stress eating, and you are RIGHT you can change it, I have been working on it and definitely making some major headway!!

Are you sure you don’t bite, cause I felt a little nibble earlier.
And I love that your mom is the bomb(dot)com.
Isn’t it amazing how parents will adapt to our new eating habits? I was afraid my parents would make fun of me when i started to eat differently, but they’re sooo supportive. Everytime we go out to eat they always make sute there is something on the menu that I will eat and if they make something ‘bad’ at home my Dad always asks me how he can make it slightly healthier so that I can enjoy it too. I.E. when he made gravy this weekend he used skim milk or on Sunday he made Whole Wheat pancakes!

Your mom’s soup looks delish. I haven’t had barley soup before.. sounds like a good idea.

I’m a little slow. I had to reread your post because I missed the part where you mentioned she made veggie soup for you and was thinking, “where’s the beef?” I never thought to put brussel sprouts in soup but might have to try them as I really enjoy them. I think I must have a high tolerance for bitter because I quite like foods others identify as such.

I “boredom eat.”

Soup looks yummy- I <3 barley. Isn’t is so funny how you can not like a food by itself (or raw) but you can like it cooked? I hope you find a good pear recipe to put together
PS -check my blog later tonight. I may or maynot be making one of your recipes (ok..I am

I love a soup that has barley in it. When one does not have soup around and one sees your post, one can have a sudden urge to make your soup recipe!
