She Says: BSI – Sweet Potatoes 2 Ways
In making my BSI submission recipe for this wake I realized that sweet potatoes might just be one of my favorite foods. They are versatile, delicious and nutritious. All star ingredient chosen by sweet Melissa.
One way I like to enjoy sweet potatoes is mashed, with the skins on …
with bananas.
I know the white blobs look like butter, but they’re bananas and they melt in the warm mashed potatoes just like butter! All you do it clean, cut and cook the sweet potatoes in water. Then, when they are soft enough that you can easily put a fork through them, drain and mash. Add a banana, mash some more and enjoy.
I can’t entirely take credit for this idea. I starting adding bananas to mashed sweet potatoes after making Rachel Ray’s Sheperd’s Pie.
Tonight, I used the sweet potato banana mash as the basis for a “pita pizza.” I made another batch of these wraps, but I made on particularly thick and spread the sweet potatoes right on the thick wrap/pizza. Then I added sauteed spinach and roasted eggplant and popped it in the oven heated at 350* for about 10 minutes. As I suspected, the bitterness from the veggies was the perfect compliment to the sweet potatoes.

Both those recipes look great- I like the idea of adding banana because it would add some sweetness without being Too sweet. Also, I got lucky enough to buy ASICS on sale before I knew anything about them and absolutely Love them. Not a huge runner; but with these shoes I’m hoping I may turn into one

I definitely like sweet potatoes more than I did before the BSI, but I don’t like them by themselves. My mom bakes them and puts butter and maple syrup on hers!

Sweet potatoes with banana sounds awesome and I love that idea of putting it on a pita! I turned the monitor towards my Mom to show her even, since she loves eggplant and SP and spinach….and she was so interested!!

Mmmm. Both look delicious. How do the bananas affect the flavors of the sweet potatoes? I love bananas but my only fear would be that it would make them really sweet.
The pita pizza looks especially yummy. I’ve seen a lot of pizzas on menus covered in mashed potatoes, but never sweet potatoes. I may have to try that. I’m thinking it would be really lovely with some thinly sliced duck’s breast. Mmmmm. Just the thought of this has me smacking my lips.

I love both of these! I never thought to combine bananas with sweet potatoes, but it makes perfect sense. Now I know how to sweeten the deal at Thanksgiving! And I love pizza anytime, any way, so you know I like that second submission

That is such a cool idea. I have to try that. I love sweet potatoes (the kind we all call red garnet yams). They are like candy.
