She Says: Dates give you sugar energy!

Hi Everyone! What a fun day. Today, the kiddies wrote the most amazing haiku. They went outside and sat under trees with their little clipboards. It’s amazing to watch them when they are hard at work and fully involved in something.

Oh, let me show you something. Many a day I eat the following at school:

A Greek Yogurt with flax and plain Stonyfield Farms yogurt. Today, I ate them so fast (kids coming back from lunch in 3 minutes) that I practically ate them together. So, why not just combine them? I think I will tomorrow.

When I got home from school I was starving per usual, so I ate two  Medjool dates before running.

People, no need to buy those energy gel things. Just eat a couple dates and you will have all the energy you need. Serious.

Post run, I made a quick dinner as I had a baking project on the mind (I’ll post it tomorrow, but here’s a hint pumpkin + peanut butter + white chocolate chips). I wanted pesto and so pesto I had.

Pesto & chickpeas with a Dr. Praeger’s, which always break. I mean really it must be the thing I am worst at cooking. This is my method. Tell me if I’m doing something wrong. Warm in microwave for 30 seconds. Carefully transfer to toaster oven. Cook. Somewhere in there it always breaks. Today it was on the transfer from microwave to toaster. Wow, what a boring post.

So glad tomorrow is Friday, right? What a whirlwind the weeks are not that I have completely taken over the classroom. Enjoy your day!

I’ll have to remember to snack on dates before I work out. Mmmm, just like candy!

I’ve never tried a Dr. Praeger. I never knew if they’d be any good based on the picture on the box. I might have to buy some now that I know they’re good. If I can successfully make them one day, I’ll let you know. :)

  2. Mara Says:

Okay I tried dates awhile back and didn’t like them… but seeing as how I used to hate mushrooms and now I ate them in practically every single meal, maybe I should reintroduce myself to dates… thanks for the inspiration!

  12. Wholesome Foodie Says:

I ALWAYS BREAK THEM TOO!! hahahah I thought I was the only one! I don’t know what it is, they must somehow be delicate in the middle or something…

  13. Biz Says:

What even IS a Dr. Praeger’s? Not sure!

  14. eatingbender Says:

Mm, one big bowl o’ yogurt sounds good to me!! And good call on the dates – sometimes I feel like bars don’t do that much for me as far as energy goes, and I think a blast of sugar would be better.

Pumpkin, peanut butter AND white chocolate chips! You’ve peaked my interest!

  15. Melissa S. Says:

  16. maya Says:

dates are so so good, they are better than candy in my opinion:) so good with pb! or in oatmeal or just by themselves they are little bites of heaven.

  17. coco Says:

Chickpeas with pesto? Genius! I haven’t had pesto in ages.

I’ll remember your date energy tidbit. I go to coffee instead. I’ll bet dates would be the more delicious way to go.

    That’s a lot of yogurt… and a lot of checkers =P

  29. healthy ashley Says:

I’ve been eating a few dates lately.. they do give me good fuel, too!

So much yogurt! Hello, calcium and protein!

  30. Catherine Says:

I think I can live on Dr Praegers… I usually let mine defrost inside their plastic package for a bit and then pop them into the oven… 30 minutes might be making it too soggy – I know mine break when I do that and then try to move then to the oven.

Um, love dates. Like seriously, LOVE dates. Cool idea with pesto + chickpeas by the way, I wanna try it!

  31. Mel Says:

Yay for yogurt! Let us know what the texture is like if you do mix them!

  32. runeatrepeat Says:

Those suckers always break for me too!

  33. rhodeygirl Says:

how’s the challenge going so far?

  34. lauren Says:

i will have to try the dates! they are always so expensive though – i am waiting for them to go on sale! I have never had Dr Praegers…
