She Says: A Cookie A Day

Well hello there bloggies. How was everyone’s Monday? Mine was odd because it is December 1st and 57 degrees in Rhode Island. V. strange.

So, I did not win the Pile on the Miles challenge, but it was still incredibly fun. Check out the results here. I wish Bobbi would do it all the time. It really gave me an appreciation for running and renewed some of the fun it for me.  Today I did a short but sweet 4.5 miles + 1 mile walking. 

Earth shattering news … I finally mixed my two yogurts. Yes, that’s right plain Greek and plain non-Greek together in one container. This way I get my protein and calcium all in one extremely virtuous snack. The new combo can be seen here with wheat germ and flaxseed. 

For dinner, I had a weird desire to make quinoa. It's a great food. A complete protein, you know. I sauteed some garlic, red onion, chickpeas, brussels sprouts, corn and broccili and added some red wine vinegar and dijon mustard. Not bad, but the vinegar was like woah! Nostril clearing, know what I mean?

 

For a little snacky snack I had more yogurt and these Barabara's Spoonfuls (think Life cereal). Well, these are too sweet for cereal, but quite a perfect snack or crack replacement.

 

A Cookie A Day Makes Santa Come Play! 

I’ve seen a couple people asking about Christmas cookie recipes across blogland, so I had an idea. Christmas cooking baking is serious business in my house. For as long as I can remember my mom has morphed into a Keebler Elf the week before Christmas turning out her own factory of cookies. There are so many family favorites and new recipes that I try to test out each year. I just love baking cookies for friends and families, so I thought I would share some of these recipes with you. So, until I run out of recipes, I’ll share one a day. Sorry I don’t have pictures to accompany the recipes, I wasn’t food photoing until this year. Feel free to share a cookie recipe of your own! 

So, today’s cookie recipe is Pignoli Cookies

These are fairly new to my mom’s cookie arsenal, but they’ve quickly become one of my favorites. The almond flavor, chewy texture and crunchy pine nuts are just perfect. They are delicate and sophisticated and melt in your mouth good. Enjoy and please ask if you have any questions! 

Pignoli Cookies Recipe (as dictated by mom) 

 

1/2 C sugar
1/2 C confectioner’s sugar
1/4 C unsifted all purpose flour
1/8 t salt
1 8 oz. tube of almond paste (She wants me to tell you the tube and the recipe amount will be a little off, the tube might be a little smaller, but it’s ok)
2 egg whites, lightly beaten
pignoli nuts (She said “a container” and instructed to judge and “sprinkle on top.”)
Preheat oven to 300. Line cookie sheets with parchment paper. 
Sift sugars with flour and salt. 
In a medium bowl, break up the almond paste. Add egg whites and beat until well belended and fairly smooth. Stir in flour mix until well blended. 
Drop dough 2 inches apart on cookies sheets. Lightly press and press some pignoli nuts into each (cover the top).
Bake 12 minutes or until golden brown. She says make sure to watch, they’re delicate!

    hey girl! okay- the concoction of non-greek and greek yogurt is so interesting. i never thought about combining the two. something i will have to try! i love that recipe- hoilday baking is the best and so fun. it really gets ya in the hoilday spirit :)

    Great job on the miles! And your eats over the last few days look yummy. I saw some squash soup at the store (V-8 Butternut Squash, I think), and it looked good but had SO much salt. I hate that about store made/canned soups/mixes in general.
