She Says: A Little Tight on Time
Good evening. I am a little tight on time because I am finishing up some student teaching bizzz nissss. Oh yes. My last day is the 19th, but the work for my course is due tomorrow.
Here’s a blurry view of what I’ve been doing lately. They’re kids, so they don’t need to be all up on the internet. I cannot complain one bit about teaching. Each day is more satisfying and fun than writing briefs. Oh yes.
I ran. It’s too late to join the Holiday Marathon Challenge, but you can check out all the progress of the participants.
I ate. For dinner, I had a Cedarlane’s Low Fat Beans, Rice & Cheese Style Burrito with some carrots and onions. The burritos are okay. Nothing like a burrito from a restaurant, but okay for frozen. I like to toast them and get the outside crispy and the inside warm and oozy. I like the inside a lot, but the wrap is meh. I wish it were whole wheat and had a flavor.
Cookie of The Day: Store Bought One I’d Like to Steal
I don’t have a recipe today, but a student had Immaculate Baking Co. Pumpkin Gingerlies at snack. I am sure you want to know how I got a picture. I saw she couldn’t open the bag, so I offered to cut it open for her. When I did this, I took a picture with my phone. Sneaky little teacher. Anyway, I didn’t eat one (I’m not that sneaky), but come on Pumpkin Gingerlies – how can you go wrong? Anyone ever had them?
Also, I had many more Egg Nog Oaties. Still good, but for the sake of blogtegrity I should tell you – the next day, they lose any trace of crunch. They are soft oaties.

Want. Pumpkin. Gingerlies. Now.
Mmmm Pumpkin ginger chews sound cool!
I agree with about teaching – each and every day is amazing!
Those egg nog oaties are reallllly calling my name. I have to make them.
pumpkin ginger!!! that’s my favorite mix for this month!!!! Have to get that package!
Good luck finishing up your work- You will be so relieved when you turn all of that in! Are you doing anything fun over your break?
Awwh! I’m so happy you’re happy Heather.
I’ve never seen Pumpkin Gingerlies. Let us know if you find them. Such a great combo of flavors!
My last day is the 18th – we can celebrate together!!
Mmm, pumpkin-gingerbread cookies. Divine!
PUMPKIN? GINGER? COOKIE? !
Aw – my friend is wrapping up her student teaching semester too
it’s kind of sad! Congrats though!!
Those pumpkin cookies sound great!
I totally agree about teaching!! I’m in my 6th year of teaching and couldn’t be happier…

I haven’t figured out a way to keep cookies crunchy…there must be some way to store them that keeps them from getting soft, right?
mmm…pumpkin gingerlies.
I’m curious about the cookies, I’ve had lots get harder the next day, but not softer. Sometimes I put a piece of bread in the container with the cookies so that they keep their moisture- I wonder if the same would work for your cookies?
I gotta get some new burritos. The kind I have now are g-r–ooooossssss!
It’s so strange how even one day can completely change a cookie!
Heart any cookie with ginger:)
“Blogtegrity” is my new favorite word. I think I will like these even better as soft oaties!!
Sneaky, sneaky teacher! Those gingerlies sound interesting.
I’m really glad that you are so satisfied with what you are doing! Enjoy these last few days!
I have been wanting to try those pumpkin gingerlies!
Agent Hangry Pants, using your phone as your secret spy weapon to find new delicious thing to eat. Very sly.
Yummm! Pumpkin and Ginger…The two flavors I love. Sounds like a killer combination….(mouth watering). I’ll have to keep my eyes peeled for those.
i like burritos, too. my dad eats frozen burritos constantly though. i swear, at any given point in time, there’s at least 10 burritos in his freezer.
i love bean burritos from taco bell. they are damn good.
That’s hilarious! I totally could have eaten half of my students’ food when I was teaching, too. Although most of what they ate was junk, it sure looked good next to my string cheese/soup lunch.
haha blogtegrity – yes, we should all keep that!
I’m glad that you ran. And that you ate. through all your busy-ness =)
Yum everything looks so good. Oh, and I am totally making those egg nog oaties!!!!
Have a wonderful day, love
I’ve had pumpkin gingerlies before…they’re ok, a little dry.
Love the stealth photo taking… Pumpkin Gingerlies? Just the name of the cookie sounds tempting!
oh wow. those look aaaaaamazing!
i also wish that burrito came in whole wheat…
hope you have a great night!
Thanks Becca! I will not even bother. I thought maybe they would be better than those gross little crisp packaged cookies. Oh well.
i love your blogtegrity!
