She Says: I Owe You a Cookie.

Hello and Happy Friday Morning! Sorry not cookie post yesterday. I had a busy and boring food day and only took these two pictures. And with my iPhone at school no less!  To make up for my oversight, here is a link to a free Tivo cookie cutter. I am not sure why anyone would want that, but there you have it nonetheless. What about free Lipstock chapstick? Free Benefiber Falvored Stick Packs? Alright, that’s all I have today.  

My new favorite combination: Stonyfield Farms plain yogurt + plain Chobani Greek yogurt + flax + wheat germ! I love it.

I took a picture of my orange today because it was so juicy and delicious that it actually made my taste buds tingle. Ya know how citrus can do that sometimes. What fun. 

Today’s recipe is for Date Balls. A classic in my family, but one I’ve honestly never eaten.  You see as a kid I had only one Christmas cookie love (I haven’t share it … yet) and all other cookies were petty much ignored. And honestly, what kid is going to be lured in by something called a date ball? I feel ok sharing the recipe because everyone else loves them. My mom did not create this recipe, but she can’t remember who gave it to her either. Without further ado, I give you date balls. 

 

 

 

Date Balls

  • 1/2 lb. chopped pitted dates 
  • 2/3 c sugar
  • 1/4 lb. butter
  • 1 egg beaten
  • 1 t vanilla extract
  • 1 1/2 c rice krispies
  • 3/4 c. chopped walnuts
  • flaked coconut 
  • dash of salt

Mix together dates, sugar, butter, egg, salt and vanilla. Cook for 10 minutes. Add remaining ingredients except coconut. Roll into small balls. Roll balls in cocunt. 

Maybe I’ll taste them this year because I just discovered my love of dates.  Looking at the recipe, I think they could easily be given a health boost by reducing the amount of sugar and butter!  Maybe I’ll do that this year. Promise to take pictures.

    I bet you would like those now. I think it’s so interesting how tastes can change over time. There are many things I used to dislike that have now become staples – tuna, fish in general, brussels sprouts, oatmeal, etc.
