She Says: Barney Butter & Banana Cookies
When I received, from Jennifer Barney herself, some of the Blog Famous Barney Butter I was truly excited. I’d been reading about the stuff for months, but living in Rhode Island, had none available to me. Thank you so much Jennifer!
My feelings toward Barney Butter are complicated. You see, I do not actually like peanut butter that tastes like Skippy or Jiff. I’ve only ever had the natural, unsalted kind and I love that and only that. Same is true for almond butter – only ever had the pure almond butter stuff and love it. Barney Butter is not what I’ve come to know and love as almond butter, but rather, it’s like a much healthier, nutritious version of Skippy for almond butter. If you grew up liking skippy, I can guarantee you will like Barney Butter and it will be better for you because the only ingredients are almonds, evaporated cane juice, palm fruit oil and sea salt. For me, however, it was a little too sweet to eat with bread or oats. I guess I prefer a more savory nut butter for every day use and Barney Butter is a sweeter, creamier type of nut butter. Once I came to accept Barney Butter for what it is and let go of my disappointment that it was not like the freshly ground stuff, I came to appreciate it more. I mean it’s quite tasty and, in my opinion, perfect for baking. I know it’s hard sometimes to find a healthy nut butter to bake and I thought Barney Butter, with its truly creamy texture, would be great.
My little package of Barney Butter came with a recipe for Barney Butter Oatmeal Cookies, so I was inspired to come up with …
Barney Butter & Banana Cookies
You need:
- 1 cup oats (for grinding, or just 1 cup oat flour if you have it)
- 1 cup oats
- 1 t baking powder
- 1/4 cup turbinado sugar
- 2 mashed bananas
- 2 egg whites
- 1/3 cup ground flax
- 1/2 cup of Barney Butter
- 2 t vanilla extract
Steps:
(1) Grind 1 cup of oats in a food processor until they are a little more course than flour.

(2) Combine ground oats with the other cup of oats and baking powder. Whisk together all these ingredients. (3) In another bowl, mash the two smallish bananas. Add the turbinado sugar and flax until mixed, then add the two egg whites and mix again.(4) Stir in the Barney Butter and vanilla extract. Try not to eat too much of this mixture from the bowl as you will need it momentarily. (5) Add the wet mix to the dry mix, stirring to combine all ingredients. (6) Scoop out cookie dough onto cookie sheet and bake for about 10 minutes at 350*.
As I suspected, the results were amazing! Barney Butter is quite perfect in these healthy little cookies. I made them for Mark to bring to his studio tonight, so I had to cover them and put them on top of the fridge so I won’t eat them all!

I haven’t found an almond butter I like yet, so maybe Barney Butter is the answer.

Oh the infamous Barney Butter. Yay for getting to try it! One day some might make it’s way to Canada…or so I can only hope.

yumm those cookies look really good! I always have a hard time parting with my bananas for baking since I love eating them with oats, in a banana pb sandwich, in yogurt…oh the possibilities.

thanks for this review of the barney butter! i haven’t been able to try it yet, but i think i am like you that i like the savory nut butters better as well. im not a huge fan of the peanut butter & co ones, which i think are reminiscent of skippy and jiff as well.
but still, i want to try this one day lol

Thanks for the Barney Butter review! I always wondered why everybody raved over it and now I realize its because it doesn’t taste like normal natural nut butters but instead is a little sweeter!
I guess I will give it a try in the distant future because well, I would have to order it online and pay shipping and I’m too cheap for that!

Thanks for the review! I am the same about PB. I like natural – and stay away from things that are ultra sweet. I will say that I am dying to try Barney Butter though, simply because everyone loves it so much. It also looks like it would be good in recipes.

i’m with you in really not liking the taste of any extra sweetener in my nut butters. i’m all about the salt though – probably because i grew up on smuckers natural pb (ingredients: peanuts + salt). plus, i love salt in general. probably one reason (other than my ridiculous job and accompanying type a personality) why my blood pressure sucks.

Great review of Barney Butter – I think you nailed it on the head. I’ve grown accustomed to the more natural tasting nut butters, so I’m always surprised by how different BB is. I like it, but sometimes I crave the natural stuff more.
You certainly put the jar to good use – those cookies look so incredible! I just finished my jar so I probably won’t have BB for a long time, but next time I am definitely using this recipe. I may just have to try it with regular PB, too!

Oh my goodness, these look incredible!! I got the same recipe in the package and saved it for later use. I think adding banana and flaxseed is really great. I’m definitely saving this recipe for future use! Thanks, Heather

Just wondering… Is it supposed to be a full tablespoon of baking powder in this recipe? I made these guys on Saturday and they tasted like baking powder!
I’m an uber novice baker, so maybe I did something else wrong? In any event, I thought I’d bring it to your attention in case you meant to put a lower case t instead of a capital T. Great recipe, though! I ate my fair share anyways, hah.
