How was your Wednesday? My trip to the gym went well. I ran 45 mintues/5.1 miles and walked 1  (at the end) while catching up on the Housewives of OC. Riveting stuff right there. Then I came home and did some yoga, which was dynamite per usual.

Apple Store Frustration

My experience at the apple store left something to be desired. Have I ever expressed my love for apple products here before? I enjoy them and, in fact, have only ever owned an apple computer (think purple imac). Today, however, I left the store with the same dysfunctional phone and a sad heart. It’s ok though because I called Mark to complain about life’s injustices and then did a small amount of shopping to make myself feel better. The one thing I want in life (well not the one thing, but something) is Fiestaware. I just think it’s all so cute and colorful and I just love it. I went to Macy’s and used a leftover gift card to buy one on-sale green Fiesta Ware bowl and a new measuring cup that has tablespoons and ounce equivalents.

Leftovers & Eggplant w/ Oat/Bread Crumbs

I continued to improve my mood by making something inspired by Andrea’s Eggplant. To take the bitterness out of the eggplant I sliced the eggplant and put it between paper towels. Then I pounded the hoo ha out if it w/ a rolling pin. It was an excellent way to get out my apple aggression. It works too. See all the bitter juices from, the eggplant on the paper towel?

I followed Andrea’s recipe and method … except I had no bread crumbs or really any bread to make bread crumbs, so I had to be slightly creative. I toasted (in the oven) a few bits of the bread I made earlier this week and put it in the food processor with about 1/2 cup of oats and some Parmesan cheese to make oat/bread crumbs.

Everything turned out well, but next time I would blend the oat/bread crumbs a bit more so they are a bit more fine.

I had leftover eggplant with no oat/bread crumbs, so I baked it with olive oil, then topped it with the rest of the tomato sauce and some more Parmesean and baked it for another time. Not another time like in Lost. Just another time like tomorrow.

 

Speaking of Lost, Mark and I watched it while munching on salsa and toasted lavash bread.

Meghann’s Marathon

Could you run a marathon? Would you ever do it? I am not sure I could train like that. I mean really – 26+ miles? It sounds crazy, but my bloggie Meghann is going to do to in April and she’s raising money for the Leukemia & Lymphoma Society. in the process. Just by visiting her blog you are helping her cause!   1. Mmm! Fabulous eggplant! I’ve heard of sprinkling eggplant with salt and covering it with PT to remove excess moisture, but never pounding it. I will have to try that next time around …

    I love eggplant parm. Great idea with the oats/parmesan combo to substitute the bread crumbs. I probably would have moved on to a different meal if I found out I had no bread or bread crumbs.
    I don’t think I’d want to run a marathon. I am toying with the idea of doing a half, and I think that should be my limit. Our bodies are just not meant to run that long. I know you can train, but still – why do this to yourself? Of course I say that now, and watch me do a half and want to do a full one :D Happy Friday!

    I usually do not care for eggplant because of the bitter taste – I just might have to try this trick and see if I find it palatable. Thanks

    Your soup looks so yummy! For some reason it is not listed on the Fresh City website, but there is a Fresh City in Livingston (about 20 minutes away). So now as good as your soup is you can still quench that craving!!! Http://www.freshcitynj.com
