She Says: Happy Birthday Weekend
This weekend, Mark and I drove from New Jersey up to Boston for my nieces birthday. On the way we stopped at Fresh City and Mark got a Cancun Burrito to get that spring break feel. I didn’t have any because it had chicken in it. It was low carb and it made us wonder, why are low carb products rubbery?

There was delicious food and fun family festivities at Hannah’s party.

Cake and Haagen Daza

Homemade Danish Cookies
After the party, we headed to my parents’ house in Rhode Island. Sunday morning I used their treadmill for a wonderful 6.25 mile run (50 minutes).
After, I went with my mom, dad, sister, sister’s man friend and Mark to Bagelz in Wickford, R.I. I got the wheat bagel and roasted pepper hummus.

Mark got a cinnamon raisin bagel with Taylor Ham, egg and cheese. Don’t get this from Bagelz. They use a microwave to cook the eggs and Taylor ham so the eggs are rubbery and the ham doesn’t crisp up like it should when cooked on a giant greased up griddle.

Then, we went for a family walk. It was frigid.

After lots of driving, we are back in New Jersey and back to cleaning and organizing the apartment. There is no end in sight!
Tomorrow, Mark is back to work and I am back to searching for a job in New Jersey. I am nervous about it, but have a plan. Tomorrow I am going to complete my resume and start applying as a substitute to some private schools in the area. At the same time, I am going to sign up to substitute in public schools in the area and work on my paper work for obtaining my teaching certification in N.J. I am not sure what I’ll find, but right now, I’m keeping positive!
One last thing …
This was Hannah’s birthday party, but her birthday is January 6th. Tomorrow, January 5th, is my other niece’s (Hannah’s cousin) birthday.

Love the chocolate frosting mouths!
Everyone say Happy 8th Birthday to Isabella (left) and Happy 11th Birthday to Hannah (right)!

“Why are low carb products rubbery?”
Because most of them are filled with fake, “rubber-like” ingredients

Happy birthdays! And good luck with your job hunt. I’m sure you’ll find something – lots of private schools in NJ (I lived right near Pennington Prep, Lawrenceville, the Hun School, and about a bajillion others – lots of options!). I totally agree about the rubbery low-carb thing… but I actually kind of like it? I get yummy La Tortilla Factory wraps.

Heather,
#1 tip for a grocery challenge: plan EVERYTHING. And plan mostly vegetarian meals. And include a bag of beans in every week! And check the sales at the store before you go and only buy fruit and veggies that are on sale.
Good luck!

Also, are those Whole Foods cakes by any chance? One looks a heck of a lot like the mocha amore cake I used to decorate…

My future cousin in-law is a teacher in Jersey! I think in Spotswood? Not sure how close to you that is.
Umm, can we talk about the low carb grossness? I mean, you are right, so rubbery, and really lackluster in flavor.

Aww the Birthday party looks like fun!

It seems like you have a good plan for the job hunt, best wishes! If you ever need any support or anything, I’m here for ya as someone who’s going through the same job-search-in-awful-economy process.
Good luck!!

Hey Heather – Happy New Year!
I just wanted to let ya know that I’m adding you to my blogroll, hope it’s okay, let me know if you hate it
January 6th, 2009 at 12:56 am
I love your new challenge! For one person, I spend an average of $40 a week on groceries, but when I need to stock up on stuff (such as now that I’m back from break), the bill goes up to around $80.
Happy birthday to your lovely nieces! You scored some great eats on your trip, with the exception of Mark’s rubbery burrito
Good luck with the job search, Heather!!
