She Says: Quinoa is Fun to Say and Eat.

My legs were a little sore today from my 8 mile run yesterday, so I decided to take it easy with the elliptical and some yoga today. I did a class from Yoga Today. The classes at Yoga Today are paced differently, usually holding poses longer and less fast paced flow, than Yoga Download. I’ve had some tough classes in the past, but then I started finding them too slow and not challenging. Overall, I chose it today because I wanted an hour class and wanted to stretch a lot.
When I was done with all of that I tried a new snack! I saw this Rachel’s Cucumber Dill Cottage Cheese. I saw it the other day and knew it was my blog duty to get it. The cottage cheese is not mentioned on the Rachel’s website yet, so here is the nutritional info: 110 calories, 2 g of fat. 15 mg cholesterol 540 mg sodium, 5 g sugar and 14 g of protein. Make sure you stir before eating because all the add-in ingredients were on the bottom. The cottage cheese itself was creamy as opposed to watery. I think the cool cucumber flavor really came out. I liked it, but I am not sure I would buy it again only because I could probably just add my own cucumber and dill (espeically because Meghann just sent me some dill) to cottage cheese and get a similar result.

For dinner, I made another Apples for Jam recipe. Can you tell I read it all the time? The original dish is Brown Rice and Lentils, but I was in a quinoa mood, and Mark had never had quinoa, so quinoa it was. Quinoa is fun to say. And eat.

We had it with roasted carrotsa and salad. I am looking forward to having it cold as a salad tomorrow.
Budget Month: Week 4 Groceries
- Week 1 Total: … $131 (first week in empty apartment)
- Week 2 Total: … $99.25
- Week 3 Total: … $58.86
- Week 4 Total: … $73.18
I got all of this at Whole Foods and A & P.

Plus 4 packages of yeast.
Now, this week ’s total of $73.18 was a bit more than I would like to spend, but a lot of it was for furture investment purposes. For example, I got four types of flour, which will make countless loaves of bread! I am cutting back though. This was the first week I couldn’t find Greek Yogurt on sale, so i didn’t get any. It’s sad, but I think I’ll live this week.
See you tomorrow! Is it supposed to snow where you live? I think it will probably just rain here, but we’ll see. You know I love the snow.

You’ve got Stoneyfield, and it usually tides me over when there’s no Greek yogurt at hand.

Gorgeous Quinoa presentation! I love it.
I always have to tell myself that if I’m buying big items like bulk items, flours, things that last me a while…then it’s okay to spend more since I can make so many meals out of it.

Quinoa is v. cool – it’s one of the only vegan complete proteins. Also I’ve been appreciating more slow yoga recently (not that I don’t still love the fast sweaty stuff!) so maybe I should try some yoga today again. I still haven’t tried quinoa despite all the wonderful reviews, but this is really motivating me to get some!
And we’re in the middle of a snow/ice storm. Everyone’s expecting a huge mess, but I’m hoping it’s not too bad. But I do LOVE snow.

It’s currently raining but is supposed to turn to snow tomorrow. We’ll see. Schools have already closed – that’s the South for ya!
I love quinoa – I think it’s probably my favorite grain. So versatile AND packed with some protein.
Looks like you got a lot for $73.18 – all those green veggies…yum! I usually make my own Greek yogurt if I can’t make it to Trader Joe’s for their cheap stuff. I buy a 32 oz container of plain non-fat organic yogurt – whatever is cheapest. Line a large colander with paper towel and dump the container of yogurt into it. Place the colander over a large bowl in fridge overnight. The next morning you’ve got strained yogurt. It’s no Fage, but it’ll do. Why is the Greek stuff so good, but so freaking expensive?!?

I love quinoa, too! The texture is so fabulous- chewy and nutty.
$73 at Whole Foods isn’t bad. I have a hard time getting out for less than $50, and I’m just shopping for me, and my no-kitchen. (Though, granted, I do buy a lot of prepared foods to compensate for current lack of oven.)

Dumb question, but I’m assuming you just “molded” your keen-wah in a cup and then plated it? I think Chris will be more induced to eat it if it is purty like yours.

My grocery store just got some of those in as well…I tried the roasted red pepper and wasn’t crazy about it but loved the lemon verbena blueberry. I still have sundried tomato pesto to try…but I agree, its cheaper to just make your own!

Love the quinoa presentation. Might be just the thing to get it past the rugrats, especially if I let them make their own “towers”.
Good job on the grocery budget, too. Especially with the Whole Foods shopping. It’s possible to keep the total down while shopping there, but not easy.

i LOVE quinoa! your meal is so pretty—this may be a dumb question but how did you get it to stay in that perfect shape? Whenever I try something like that it just falls flat all over the plate. boo.
also—have you tried red quinoa? I think it has the same nutritionals/taste but it’s pretty!
