She Says: Breakfast Cookies Are a Raw Delight
I’ve wanted to make Fitnessista Breakfast Cookies for months, but they require overnight refrigeration and I never remember that part! But the Raw Challenge was the perfect reminder. Gina’s original recipe called for things I did not have or could not use if I wanted it to be raw, so here is what I put in mine.
- 1/2 Cup Oats
- 1/8 Cup Bulgur Wheat
- 2 teaspoons ground flax
- 1/8 C water
- 1 mushed banana
- 2 T crushed raw almonds
I popped it in the fridge last night, but was a little worried it wouldn’t solidify because I didn’t use nut butter (no raw nut butter on hand). When I woke up it was a little mushy, so I put it in the freezer for about 20 minutes. Then I took it out and let it thaw a little and used a spatula to get it off the plate. It was perfect. The oats were soft and the bulgur and almonds were still a little crunchy. I will be eating a lot of these! Thank you Gina for creating these cookies.
Protein Issues
It was interesting to read the comments from my post regarding belly problems/hard bellies. A few people mentioned I might be lacking in protein and/or water. According to this article from Runner’s World:
- Following USDA recommendations, I need .36 g per lb of body weight
- Following ISSNs recommendation, runners need between or .45 to .72 grams per pound.
Do you eat a set amount of protein per day? If so, how did you arrive at that number?
Perhaps I am not getting enough protein? Or perhaps it’s the type of protein I have (mostly beans and yogurt) combined with not enough water? It’s definitely something I want to look into. On the other hand, my goal in terms of overall physical and mental health is to be intuitive and balanced, which for me means not counting things or making decisions based on numbers. Since completing Meatless Month in July, I’ve eaten meat less than 5 times and ordinarily, do not miss it. Lately, however, I’ve been wanting a turkey sandwich with all of my heart. This could be because I am making them for Mark a lot, or because my body needs it. I am not sure, but right now, instead of trying to count protein grams I am just going to try harder to eat what I want. The thought of eating meat regularly leaves me confused, conflicted and slightly guilty, so we’ll see. Maybe I just need to make more hummus.

I’m getting my MS in dietetics/nutrition, and we typically recommend 0.8g protein/kg body weight (unless the body is under significant stress, in which case we go higher).

OH I love Gina’s Breakfast Cookies! They’re perfect for on-the-go, rushed mornings too!
I don’t keep track of my protein, but I do try to listen to my body. If I’m lethargic or craving meat, I usually try to pack some protein in using beans, protein powder, tofu, or Chobani yogurt.

Congratulations on the award! I like the new twist on the breakfast cookie… bulgur wheat sounds like a yummy addition.
I don’t count grams of protein, I just try to make sure I have some with every meal.

I had a b-fast cookie this morning too!! Though, yours kinda blows mine out of the water. Mine was also kinda mushy, but I just ate it with a fork. Must try the freezer trick next time!
I have no idea how much protein I consume, but it probably isn’t enough. I’ve always had this issue! Then again, I only need about 42 g, which adds up easily. Who knows— I ain’t countin’.

How much is 1/6 cup? I shoot for about 50 grams. I got that number using a calculation in a book by a vegan dietitian.

I don’t count protein either, but I try to make sure I eat enough of it because it’s filling…maybe not more filling then fiber-y carbs, but different filling if that makes sense (yes, I just turned “fiber” into an adjective).
Re: water, remember that your water intake includes the water in your foods. So your breakfast had the water you added plus the water in the banana. Fruits and vegetables are loaded with water, usually. You still might not be getting enough, but it’s good to keep that in mind. I drink like a fish, but my office is right next to the bathroom so it’s all good

Hmmm…I guess I don’t count protein grams – maybe I should? But I guess I eat so much cheese, yogurt and veggie burgers I would think this would be enough. I’m going to count tomorrow just out of curiosity. If I can remember, that is.

Ah, the infamous b-fast cookie. I haven’t had in one in a long time. Must remember to put it back in rotation every once in awhile.
I don’t count how much protein (or carbs, or fat for that matter) that I eat in the course of the day. But since I am niether vegetarian or vegan, I figure I am probably consuming more than enough for my needs. I know when I did my dietary analysis for my nutrition course, all of my macronutrients were good.

Love the breakfast cookie! I do not count my protein grams but I know that I get a lot because I eat turkey for lunch with hummus, and some sort of chicken and hummus dinner usually!

I have got to get on the breakfast cookie bandwagon.
I don’t count protein either, but I used to back in my counting calories days. According to the guidelines I went by, I need at least 41 grams a day. When I was counting protein, that number was super easy to reach and I always waaaaay surpassed it when I had a piece of meat. On days I work out “hard” I try to eat more – like with extra tofu or a protein shake – to get about 60 grams. I’ve heard that after a few years of being a vegetarian, your body can be “out” of protein it’s accumulated over the years if you’re not conscious of getting complete proteins in your system. Also, protein from some plant sources can’t be absorbed if they’re not eaten with something else that aids in the breakdown and digestion. This is stuff I’ve heard/read, but never really researched, so I need to get on that. Sorry this comment is long

Perfect cookie – freezing is definitely key!
I am so confused about protein intake. Everything I read says something different. My intake is usually right around 100 grams a day…sometimes more, sometimes less. My breakfasts have been a lot higher in protein lately which helps, especially since I morph into a total carboholic at night. Maybe play around with your numbers to find what works best for you. Might complicate your raw foods experiment, but you could try adding more fish or sushi to your diet.

Wow, what a delicious breakfast! I would trouble with a mostly raw diet b/c I love warm foods! I roast about 50% of my food! I have seen a lot of raw cookbooks and recently made this recipe for raw apple pie:

I’m so glad you posted about your breakfast cookie. I had trouble with mine. I can’t explain why, but it just wasn’t the right consistency so I gave up on breakfast cookies, but I might try your version. Thanks

I’ve been doing a weight lifting program, since my goal is to pack on the muscle, I’ve been shooting for 1g for every pound I weigh (so 130-ish). I also want to add that I spent 8 years as a vegetarian and have recently started eating fish and poultry again and it’s made a huge difference in how I feel. I don’t really know how to describe it, not necessarily more energetic, but more awake. Anyways, I realized that feeling good was way better than not eating food because it “grossed” me out. Eat that turkey sandwich if you want to!!

I don’t track my protein, but I do get some with every meal. When I gave up meat for Lent last year I definitely noticed a difference, like feeling less full and more tired. There’s a Nutrition area on the Runner’s World website and I know they have some articles about getting enough protein for running when you’re a vegetarian. They might have some helpful info for you.

re: protein: I heart protein compared to other nutrients. I find that if my meal is not protein heavy, I am starving in less than 2 hours.
I try to get in at least 20-25 grams of protein at each meal- usually about 100 grams per day if not more.
