She Says: EZ Elegance

My Valentine’s Day celebration began last night when I made Mark his favorite sweet treat: Brownies from a box.  I got this box of brownies for $1 and EZ Elegance Brownie Pan for $1.99 at Stop & Shop. EZ Elegance is right.

Of course, I couldn’t follow the box directions. I made Banana Nut Brownies by adding bananas and snacktrition sea salted almonds.

I prepared the box of brownies, subbing yogurt for the oil. I poured half the mix in the pan then added sliced bananas and almonds.

Then I poured the rest of the brownie batter on top and added more almonds and banana slivers.

Using an 8 x 8 pan produces brownies that are cooked on the perimeter and ooey gooey on the inside, as in barely cooked.

Mark had brownies for breakfast, but I had a brownie and Oat Bran. Thanks to Heather and Maggie, I knew I needed to try it asap. I made mine with banana and cinnamon. IMG_4656

Oat Bran is like breakfast couscous, which I believe is a delicious thing! It doesn’t have the same chew factor as oatmeal, but it was really good and reminded me of Cream of Wheat. I am thinking I might do half oat-bran half oatmeal next.

I am so proud of my ankle. What a trooper. Although it turns crazy colors, the swelling is way way down. I think I might attempt a trip to the gym. No running, of course, but maybe some bike/elliptical and arm machines. The busted ankle can help me buff up my guns.

I want to take it easy though because tonight Mark and I will be doing some NYC walking. We’re going to Pure Food and Wine, a raw foods restaurant that I’ve wanted to go to for awhile. I’ve been looking at the menu for weeks and can’t decide what I want. Well actually, I can decide – I want everything!
