She Says: Raw Dinner #1
I think I found my Tempo Pace today! My ankle was feeling okay this morning, so I went to the gym for an easy run and ended up doing 45 minutes at 6.5 – 6.6 and 0 incline. I usually run between .5 and 2% incline at 6.7 – 7.1 mph. This isn’t a huge difference in terms of numbers, but as far as effort it was amazing. The lower speed plus no incline really made today’s run less difficult. Interestingly, it was also much more boring! Do you find that the harder you run the more interesting and fun the run is?
Raw Foods Day 1
My mom called me this afternoon and asked if I was following my “raw foods diet.” I explained that I wasn’t doing it all the time. When that didn’t seem to satisfy her, I explained that I had a raw banana … and cereal for breakfast. She laughed and told me she had a raw apple.
Well, I did have one raw meal today, but more on that later. During the day, I tried to eat normally, meaning that I tried to not to eat more than usual because I feared I would be hungry after my raw dinner. I will admit, however, that I added more almond butter than usual to my sandwich today. It was actually quite delicious: Zinke Orchard’s Creamy Natural Almond Butter + Apple Slices on my Oatmeal Yeast Bread that I sliced and froze last week. I take out the slices two at a time as I need them and it works out perfectly.

I also had some deliciously sweet dried fruit sent to us from Sunbird Snacks. The company makes a ton of trail mix, dried fruit and other snacks. Mark’s already eaten all the Hot Cajun Mix and Nacho Cheese Chips they sent, which he enjoyed quite a bit. I had a bite of the Cajun Mix and it was v. hot to me!
This was the Mango Fruit Mix which is good, but reallllly sweet. I liked how it had a good amount of the good stuff – mango, apricots and pineapple.
Raw Sundried Tomato Pesto
For dinner, I had my first intentionally raw creation and it was awesome (Mark agreed). The recipe is a combination of the Zucchini Pasta Marinara and Pesto Pasta from RAWvolution by Matt Amsden. In my Zucchini Pasta was:
- 4 cloves of garlic
- 1 cup of spinach
- 1 cup of basil
- 1 cup of sundried tomatoes
- 1 T of olive oil
- 1 T of raw pine nuts (plus more for sprinkling on top)
- Zucchini “Pasta”
A couple of notes on this raw meal
- It was delicious and I will make this pesto again.
- Next time I will leave the zucchini noodles at room temperature for 6-8 hrs to improve their texture.
- Next time, I will try to use a veggie peeler to make the zucchini more noodle like.
- I am excited to have this for lunch tomorrow!

Yes, I’m that way with the runs too (he he, I said “the runs”). If I have a short or tempo run planned, I have to make up little games, like running my fastest mile or 5K. Otherwise, its a snooze.
Your dinner is lovely, but even with the pumped up snacks, how are you not starving?! I’m assuming and hoping snacks will be had (yogurt and nut butter, perhaps?).
Did somebody say coupon? Honey, grab me the scissors and my velcro coupon organizer!!!!

Hey Sarah: I very rarely post everything I eat, but I guess I should note that specifically with the raw meals. For example, today I also had Greek yogurt and an Honest Foods Almond Bar.
Clearly, not raw items.

That pesto and zucchini looks great! I might have to make that sometime. I made raw lasagna one time and it tasted really good, but I had problems with it being filling. I do enjoy raw foods and certain raw recipes … I think they’re neat! Thanks for sharing : )

impressive raw cooking! also, i am ALL about freezing bread. usually i pack my lunch sandwiches up still frozen — they always thaw by the time i get to eat, plus they help keep everything else cold!
one little point about the word ‘tempo’ — the word ‘tempo’ run implies an increased pace, one that is comfortably hard. so i was totally confused by your first paragraph! unless i’m still reading it wrong. anyway, i am so happy you had a good run! yay!!

That looks so good!! MMMmmm, I love sundried tomatoes.
I am SO happy your ankle is feeling better!!! That is so exciting. I definitely find that the faster I run on the treadmill, the more exciting it is. Actually, what’s fun (for me) is to start off at a comfy pace and gradually increase it, then sprint at the end. I usually bump it up every .25 miles or so (just in increments of 0.01). It at least keeps my mind on something else.

Do you find that the harder you run the more interesting and fun the run is? YES! Give me speed intervals where I’m panting and sweating to death in any day over a steady-state run on the treadmill (so boring!)

Doing speed intervals does make running more interesting, but not more fun for me. I like my long, steady runs.
