She Says: Hold Onto Your Hats!

This is gonna be a long one!

Monday’s lunch was in two parts and used up all my Pecan Butter. The good thing about the Salad Challenge is that I know I will get in my veggies at some point during the day.

Part I – Before Shred

  • Wrap
  • Pecan Butter
  • Part of Banana

Part II After Shred/Before Yoga

  • Greek Yogurt
  • Other part of banana
  • Pecan Butter
  • Baked Oatmeal Square

The Oatmeal Square was

  • 1 Cup Spelt Flour
  • 1 Cup Oats
  • 1 t Baking Soda
  • 1 t Vanilla
  • 1 Flax Egg
  • Soy Milk

All mixed in a bowl and baked for about 12-15 minutes. 

Obviously running out of butter necessitated a trip to Whole Foods for more pecans. I bought two cups and grounded those babies for a looong time. I didn’t toast the pecans this time and I don’t love the result as much. It has a different, more pecany taste and is a little grainier than the first toasted batch. Don’t worry. I will eat it all up.

I also got to sample some new to me products while at Whole Foods

First up was the Lesser Evil Table – The Krinkle Sticks were pretty good. Kind of like a cheese doodle with all the cheese sucked off. Slightly less dense. No popcorn was consumed during testing. I don’t know why.

Next was the City Girl, Country Girl Chocolate Chip Cookies with Almonds.  Sadly, all the cookies were crumbled by the time I got to them, so I didn’t get the full experience. I do know they are the crunchy variety and tasted nice.  Even if they crumble they would be good in yogurt and the ingredients are stellar.

Dinner was a salad for Leng’s Salad Challenge:

  • Spinach
  • Radicchio
  • Cucumbers
  • Tomatoes
  • Black Beans
  • Kidney Beans
  • Corn
  • Whole Wheat Whole Foods Pita
  • Dijon Vinaigrette

Week 2Break The Habit Challenge

I know it’s hard to believe, but this is actually an improvement and I haven’t bitten in a week! Before I go to bed I am going to apply some nail strengthener stuff that Mark’s mom gave me.  How are you doing on your habit breaking challenge?

    yeah… i was spending all afternoon thinking about how to make it tasty for a non mushroom lover like yourself, and I simply COULDN’T think of a good way besides not to eat it hahahaha. I was trying to get creative with sauces, but in the end it was too hard.

    I am not doing so hot on the challenge. To be truthful. I’m trying to give up sweeteners. There is definitely Sweet n’ Low in my coffee this AM. Bah!

    Love your site. Been a reader for a little while – wanted say Way TO Go! on the nail biting. I don’t do it, but my mom does. She does it more when she is stressed. The nail strengthener is a great idea. It tasted really bad – so my mom says =) My bad habit are those little packets of yellow crack. But I can’t give it up yet. I just gave up the coffee mate – one thing at a time or I might explode. =)

    Pecan butter… YUM! I mixed some in with some other things the last time I made nut butter, but I should make a batch of straight up pecan butter the next time. Goodness knows, my parents’ trees keep me well supplied with pecans!

    Good luck with the nail biting. I’ve never been one to bite my nails, but I have some friends who fight with that habit!

    so what pacing group are you in for the brooklyn half? btw, for some reason i thought that race was cancelled. im doing one in central park on sunday and i am SOOOOO nervous. i cant even remember what pacing group i put myself in for that one, but ill be ok with being in a slower group for a longer race. i dont have a garmin or any other special watch with super cool features, so thats why i had no clue how i run, but i guess i should have figured id be in decent shape since i run several miles a day every day i dont work.
    sorry i just wrote an essay.

    oh, and i agree with the salad challenge, i love that i am forced to make creative yummy salads bc i dont have to think about getting in my veggies.

    I LOVE those swan bowls! At my WFs (its really a smaller community market bought out by WFs!) they usually only have the same granola at the end of each cashier line to sample.

    OMG! You almost have nails. They look better already. Once you have a manicure and your cuticles are pushed back they will look even longer. Keep them polished so that they don’t break. Congratulations on the first week of success.
