She Says: Leng’s Gonna Beat You Up

Well isn’t ironic that I resisted the cookies I baked last night and then this delight arrived on my doorstep.
You might remember that I mentioned on Monday that I was able to sample some City Girl Country Girl cookies at my local Whole Foods, but that they were all crumbly. Well I am one lucky girl because now I get to try all their flavors – crumb free! Good chance for a giveaway for you, so stay tuned.
I am really excited about these cookies for a few reasons. First, it’s a company started by a woman who loved to bake healthy cookies. It’s still a pretty small company and that makes me excited! Second, the ingredients are awesome! They contain NO white flour, wheat flour, refined white sugar or eggs. They are still a cookie, but at least I can feel wonderful and virtuous when I eat them. Third, the cookies, at least the Oatmeal Raisin is really tasty! I started with Oatmeal because that’s my favorite cookie type. These have such a healthy and wholesome flavor! They are not overly sweet, buttery greasy in the least. But that doesn’t mean they’re bland – they really taste just like a classic oatmeal cookie! They are crunchy cookies, but still a little chewy the way that oatmeal cookies often are. I am not a fan of raisins in cookies, but I barely noticed them.
The only identifiable downside thus far is that they are a little caloric for their size. The Oatmeal Raisin, for example, weighs in at 100 calories each. They were so good though that I had three!!! And that, my friends, is an excellent reason to run!
Speaking of running, today was a Tempo Day. I’ve been feeling really great while running lately. Maybe it’s the outside runs that is making me better? This week, I did a great tempo run and played with the incline a little as well. Nothing crazy, just going up from .5 to 1 to 1.5. Here is what I did:
- Miles 1 & 2 – 6.7 mph (8.57 pace)
- Mile 3 – 6.8 mph (8.49 pace)
- Miles 4 – 6.9 mph (8.42 pace)
- Miles 5 – 6 – 7.0 mph (8.34 pace)
HRM Stats:
- Total Miles: 6
- Total Time: 52:35
- Av. HR: 159
- Max HR: 188
- Cals: 414
When Mark and I got home from work we ran a few errands – Post Office, Dollar Store, “Clothing Store” (Mark’s term), and Market to obtain tub de-clogging supplies. We’re going baking soda/vinegar hanger method. Any other suggestions would be greatly appreciated. Anyway, on the way back home Mark ranked his hunger a 5.5 and I ranked mine a 6, so I cooked quick and light dinner that I’d been thinking about all day and that satisfied the criteria for Leng’s Salad Challenge. By the way, my favorite part of the Challenge is not the nutritional benefit of vegetables, but rather it’s telling Mark that if he doesn’t eat his salad Leng is going to come beat him up! Even though I am sure Leng is a nice and peaceful person who would not resort to violence if Mark skipped his salad, it’s still pretty funny for me!
- Baby Spinach

- Cucumbers
- Greek Yogurt mixed with Tahini
- Hummus Patties
The Hummus Patties were simply 1 cup of the hummus I made the other day with a sprinkle of dried parsley, 1 t or so of cumin and about 1/4 cup of oats cooked on the stove.
Of course I had another Oatmeal Cookie.

You can use a plunger (like for the toilet) on your tub drain.

where to start, where to start….i NEED to find those cookies! whole foods you say? i think i may need to check at a different whole foods, bc i KNOW my cookie aisle, and i dont recall seeing those babies. the stats sound phenomenal. the salad challenge is totally motivating me too…not gonna lie, i do fear the wrath of leng (!!)…but just a little bit.
oh and, most importantly, good pacing lady

Wow, those cookies sound fantastic! I love oatmeal raisin! I’m mostly vegetarian and I don’t eat eggs, and believe me, it’s hard to find decent cookies that don’t contain eggs. I will definitely keep an eye out for these!

I LOVE supporting the small companies. I can’t wait to hear what you think of the other flavors…I love love love to bake cookies from scratch, but let’s face it, it’s nice to have mixes on hand for “cheater” days.
