She Says: One for Me, One for You.
Happy Friday Night Everyone!
I wanted to go back to my previous post to clarify one thing. I hope it did not seem like I am only okay with food and my body because I run so much. That’s really not it. I am actually not running or eating more than normally. The shift came about because I stopped running primarily for exercise and started running to improve and complete a half marathon. In the past I’ve enjoyed running for the sweat and workout it provided me. Whereas yoga is my love and mental solace, running was just a physical outlet. Now I am running for another purpose. I hope that when I am no longer training the good habits and mindset I’ve developed recently carry over into my normal everyday life.
Ok, so. How was your day? Mine was good. Some ups and downs, but I am ending it with some self care. Couch time with May’s body + soul that I retrieved from my library and Pecan Butter by the spoonful.
Yesterday I skipped my scheduled “strength,” so I did my Shredding today. I also bought some more pecans to make more pecan butter. I thought I’d show you just what to do in pictures.
Pecan Butter Picture Show (or How to Make Obscure Nut Butters)
(1) Put pecans on a baking sheet and bake at 350*
(2) Bake until you smell the wonderful aroma that is toasted pecans. About 10 or 12 minutes.
(3) Put in your food processor, blender or coffee grinder.
(4) Occasionally scrape down the edges.
(5) Mix until it is at your desired consistency then pour into your Obscure Nut Butter Jar.
(6) Put your Pecan Butter in the fridge, preferably next to some other obscure homemade item like Garlic and Cumin Hummus.
And there ya have it!
For dinner, in between licks of Pecan Butter, I had a Leng’s Salad Challenge salad.

- Radicchio
- Corn
- Grape Tomatoes
- Cucumbers
- Raisins
- Amy’s California Veggie Burger
- Pita
- Bad-Ass Balsamic Vinaigrette Dressing
The dressing was new to me today! It’s from PETA’s Vegan College Cookbook: 250 Easy, Cheap, and Delicious Recipes to Keep You Vegan at School by PETA with Starza Kolman and Marta Holmberg. The publisher of the book recently contacted me if I would like a copy. Even though I am neither a vegan nor a college student, I said yes because I thought it would have lots of great ideas. The book has a ton of quick and easy “assembly” type recipes that are perfect for both vegans and non-vegans.
Guess what? The publisher sent me two of these cookbooks. One for me … and one for you! Contest will commence Monday. What should I do to spice up this contest? Any ideas?

I love Body+Soul!!! I loved the Eat For Health/Powerfoods spread – so awesome. I am going to have to make your pecan butter soon, looks yummy.

What an awesome cookbook! I think it would be cool to have everyone say what was their favorite or wierdest food they made routinely during cramped college living! Sometimes it gets pretty funny!

Oh yeah, let’s make this a fun contest. I’ve got a couple ideas:
1. Require contestants to come up with tattoo designs for the cover girl’s other arm (assuming she only has ink on the arm in the cover shot)
2. Require contestants to come up with a new protest target, not currently on PETA’s radar. And they have to create an outline of what the protest letter would look like. Like requesting the Florida Marlins to change their name, or something like that.
Make ‘em work for it. That’s all I’ve got. I hear Obscure Nut Butter is touring with The Sting Cheese Incident this Summer. I’m just sayin.

Hi your pecan nut butter looks wonderful and as almond nut butter is very expensive here, i am thinking of trying to make my own, so i was wondering, how many grams of pecans did you use for the baking, as i know the amount and the timing is dependent on one another right? thanks.

I love nut butter slideshows! And yours is fabulous, particularly at step 2 where you wait for the wonderful aroma! Pecans are one of my favourite nuts and I keep meaning to make it into a nut butter. Your dinner salad looks great too.

Hmm, contest ideas…a poem writing contest about why we want the cookbook? Make us list our top ten favorite vegan recipes? Ask who wants it the most and what they’re willing to do to get it? Pick a random birthday, don’t tell us what it is, and whoever was born closest to that date gets it?

With the homemade nut butter craze going around recently I’m seriously considering never buying another jar of nut butter again. I’ll further this consideration when I find an easy way to replicate white chocolate wonderful. Although I’m sure Peanut Butter Boy’s got that covered already. Research time! I’m loving the looks of that pecan butter though, a nut butter I have yet to try. I might just have to make it next.
I have that cookbook coming in the mail too! Glad to see you got yours, hopefully that means mine will be showing up soon

Shoot. Sent CD to Costco for our weekly groceries today and forgot to tell him to get pecans. I’ve been dying to make some. Oh well, this week it will be roasted walnut butter again, but definitely pecan next week.

You’re so awesome for posting the steps for the pecan butter. Had I known how easy it was, I would have done it eons ago! I walked right from the computer into the kitchen immediately after reading that and made heavenly pecan butter in less than 30 minutes! You rock, girl!!!

Thanks for this nut butter recipe! I decided that a food processor might be better than a Vita-Mix. I don’t have one…but hopefully I’ll have one someday!
