She Says: Chickpea Taco Salads – Ole!
Tonight one of my oldest and dearest friends came over for dinner. Although she lives in NY and works in NJ, I hardly ever get to see her. We are both busy with our own lives. You know how it goes. But finally, we got to hang out tonight while enjoying Chickpea Taco Salads and chatting about life.
While prepping, I was actually hungry (not fake hungry where I convince myself I must eat chips before dinner) and had some Natural Blue Tortilla Chips. These are Nature’s Promise Brand, which is Stop & Shop’s Organic product line.
I decided make your own salads would be fun. Here was the whole Salad Assembly Station. From Left to Right.

Cucumbers

Limes and Cilantro
-
Avocado
-
Tomatoes
-
Lettuce
-
Chickpeas (check out the recipe for all the good spices, etc. that are involved)

Blue Corn Tortilla Chips

Salsa
Clearly I am need of some serving dishes. I expect an email from my mother saying the following, “Heather, if you get married you can register for serving dishes and people will buy them for you.” I am actually 100% certain an email of this nature is coming my way.
Nate says Mexican is Stock Up and he is right. Like with tacos, where I always have two or three, I had a few refills on the salad and chips. It was fun to make and delicious. My favorites part of these delicious salads were the chickpeas and the lime squeezed on top.
Per usual, Mark was not satisfied after dinner, so he took to the kitchen and retrieved wraps, cheese and hummus. He carefully spread the hummus on the wrap, laid the cheese atop the creamy hummus and then added the taco toppings. He was so proud and insisted on a picture. It broke my heart to tell him he’d only made a modified Crack Wrap, the first of its kind on Hangry Pants.

And the Strawberry Sorbet, well it was delicious. But I think I will wait to discuss it until (a) I have better lighting for pictures; and (b) it’s actually frozen and not served over yogurt (although I highly recommend that as well!).

Cool salad! I love how you have everything set up to create your own meal. That makes dinner seem like more fun.

Oh man..i don’t even have a significant other that I live and/or have a blog with, to hopefully marry sometime in the future to justify asking everyone i know to buy me a vitamix, brevielle juicer AND new serving dishes

I love taco nights! And you introduced me to some new flavor/ingredient combinations to try for my next one. I have a hard time wrapping my mind around a lot of chickpea dishes, even though I love them when I eat at restaurants (like in Indian food).

I just read the part about Mark’s crack wrap and said out loud, “THAT IS AWESOME!” Then I had to explain the whole thing to Chris…which didn’t make much sense at all.
I might go make a beer ice cream float in Mark’s honor. And I would definitely buy you a serving dish.

Oh my gosh, I love chickpeas and I had never thought of using them in tacos or taco salad! I usually just use black beans. Wow, thanks
