She Says: Oh Lordy Lordy
Hello! Today was Day 1 of Summer Enrichment class. Class 1, piece of cake. Four little kids eager to learn all about the ocean. Class 2, not so much. Many more little kids, some eager, some not so eager to learn about science. Hmmph. I need to go find more exciting sciencey things to do for tomorrow! They are definitely going to give me a run for my money.
Classes end at 12:00 and I walked right on home for lunch. I had leftover pesto that Mark made with my own “"zucchini noodles” and a delicious plain Oikos Greek yogurt. The cold and creamy was perfect for a hot summer day.
I followed that up with a big bowl of watermelon. Perfect summer treat!
Oh and I am not sure I shared the present my sister got me for my birthday.
It has lots of herbs like rosemary, chives, parsley and lavender. It also has the basil that Mark used in the pesto. This is the best smelling plant ever.
The rest of the day includes an appointment regarding my finances that I am dreading, another trip to the local library and hopefully some relaxation at the gym.
Have a gorgeous day! I might actually have to water my tomato plant today!

I think I just might have to head over to Schatner Farms and buy myself that plant… don’t you just love the pot!!!!
Love all the herbs! You can do so much with that.
I’m sure you can find lots of exciting things to do for the class

Wow, the plant is growing in very nicely. It’s like a forest compared to when you brought it home!
re: your financial appt– Don’t dread it! You will feel so good afterwards for being proactive in getting things in order!
p.s. The Housewives of NJ got picked up for a 2nd season… who do you think is worse when it comes to embarassing themself on national TV- Danielle from NJ or Kim from Atlanta?
hangry hangry hangry PANTS!
i am so jealous of that plant! so nice to have fresh herbs right at your door.
That plant is beautyful! My mom grows fresh herbs and gives me some when I go home, so wonderful!
Sorry about your 2nd class – you’ll get ‘em into it though!
How old are the kids in your enrichment classes? I surprisingly love science now! I’m sure you’ll be able to come up with something fun
enjoy the rest of your day! i used to love going to summer enrichment classes
love the plant- nothing beats fresh herbs!
Am sure you’ll find some cool stuff to grab their interest- we made fizzy sherbet in science class and it was a hit! (50g icing sugar, scant teaspoon bicarbonate of soda, scant teaspoon citric acid)
I love fresh herbs. My mom has TONS on our deck all the time.
Looks like the perfect summer lunch, Heather! Good luck with your classes. Hopefully the second class will come around, I’m sure they’ll fall in love with you and then the science will be easier to catch on
Love that plant! My mom grows them on the deck but we don’t have a deck. I never thought that I could put it inside!!
I have 2 zucchini and 2 squash in my fridge and I need to use them before Friday – veggie noodles with pesto sounds like the perfect solution! Can’t wait to meet you at the healthy living summit in Boston
That is such a cool pot of herbs, I need to find one!
Aw hope the kiddies aren’t too troublesome
And what a nice, fresh plant!
That all looks like such great summer food! I’m going to make myself a big salad tonight just so I don’t have to cook.
And I love the herbs!
What a gorgeous plant!! I love it!!
I taught a summer science camp to kids a few years ago! I did a great lesson on clouds and we made our own clouds with a big jar, water, food coloring, ice, and matches (for the teacher to use). I just found this website… maybe it will help- the kids always loved this one! http://eo.ucar.edu/webweather/cloudact1.html
Good luck!
Creative idea with the zucchini! I want a spiralizer but until I guess the peeler will have to do
