She Says: Cherry Chocolate Chip Granola Bars
Good Morning!
Yesterday I received an awesome box of goodies from Nutiva, which included Coconut Oil and Hemp Seeds.
You know I had to bake something with these goodies, so I googled “granola bar coconut oil recipe” and found Angela’s Raw Granola Bar Recipe. I love finding other blogger’s recipes on google. Anyway, using her recipe as a guide I made these.
Cherry Chocolate Chip Granola Bars
Ingredients

1/8 C Coconut Oil
-
1/4 C Honey
-
1 C Rolled Oats
-
1/4 C Hemp Seeds
-
1/4 C Ground Flax
-
1/8 C Water
-
1/3 C Chopped Fresh Cherries
-
1/3 C Chocolate Chips
-
2 T Sunflower Butter (I used SunButter)
Directions
-
Combine Coconut Oil and Honey in a small bowl.

In another bowl combine oats, flax, hemp seeds and water.

Add the honey + coconut oil mixture to the oat mix.

Stir in the cherries, chocolate chips and sunflower butter.

Add chopped cherries, chips and sunflower butter.

I put it in a greased cookie sheet with high edges, but I didn’t use the whole cookie sheet. I spread it with a spatula until it was about an inch thick.

Baked at 325* for about 12 minutes. Take out and allow to cool a bit and then flip the bars over and bake the other side for about 10 more minutes.
I think adding ground flax + water helped these babies bind together and create a crunchy, yet chewy granola bar. I don’t love cherries, but I liked these bars because the cherries dried up and gave them a nice sweet chewy texture.
I had one this morning with my Oikos + flax.
I like the plain usually, but today I had vanilla. It is really good and not a sugar bomb like other flavored yogurts. The tangy flavor of plain still comes through.
I mentioned yesterday that I was in a bad mood. It was horrible. I was a misery. Annoyed by absolutely everyone and everything. I felt even worse for feeling that way, but eventually I just dwelled in the funk. Late last night when Mark came home from work we went for an hour long stroll from 11-12. I love our walks and it totally de-funked me. What is your bad mood cure?






Holy moly those looks awesome. Never tried Hemp Seed before. the best way for me to lose my funk is to get outside and get some exercise. Going for a walk or a sail/canoe ride usually does it for me.

I’m sorry about the funk – we all have those days. Walking or running is one, taking a bath, or just doing something like shopping, sitting and reading, laying in my hammock…

I usually do some sort of physical activity or listen to some good music to get out of a funk. Honestly, when that doesn’t help, I just let myself be sad until I get over it! Sometimes, that works better than anything else.

I am allergic to coconut oil.
Yoga, lifting weights (my new passion) and walking are really good mood busters for me. I also find that cooking a complicated meal is a wonderful funk buster!
If I am in a funk I try to find some way to remind me that it’s not about me! I play with my neighbor’s little girl and that seems to help me shake off the grumpies.

Coconut Oil is a great way to get some good fat! I put it in my smoothies and you can’t really even taste it!

some time alone stretching or a nice walk with my hubby really does wonders for my mood.
Mmm, I made a big batch of energy bars a few days ago and had one for breakfast this morning smeared with almond butter. Tasty.
Walking is always my cure for when I’m not feeling 100%. Hang in there.

If I’m in a funk I find that a good stroll through a grocery store helps me out. Go figure!!

Those do look good! Coconut oil is so pricey but it makes for great results!
When I’m in a bad mood I try to hang out with someone who is generally postive. I usually emulate the mood of the person I’m with!

I’ve never gotten hemp seeds before, do you know it they have those at Trader Joe’s or WHole foods??
I put ground flax seeds in pretty much everything I make, like pancakes, muffins, sprinkle on cereal. I would love to do the same thing with the Hemp Seeds!

Bad mood cure? Organizing something. Even if it’s my sock drawer. Makes me feel like I’m more in control of my life, and that makes me happy
