She Says: Banana Oat Muffins
Recently I received a complimentary copy of Cooking Light to review. I love Cooking Light and appreciate the new design changes they made. One thing I noticed was that it was easier to read while working out.
I took my copy of the magazine to the gym and read it on the elliptical. When I spotted a delicious sounding Banana Bread recipe, I decided to get wild and make some Banana Muffins Friday night. I created something healthy and delicious, my favorite kind of creation. The coconut oil adds a faint, but distinct flavor to the subtle banana muffins. The small amount of oil combined with the yogurt kept the muffins light and moist. They were so good that Mark ate all the mini muffins (minus two that I was able to grab) in less than 24 hours! Needless to say, I will definitely be making these again.
Banana Oat Muffins (Modified Version of Eileen’s Best Banana Bread)
Ingredients:
- 3/4 C Old Fashioned Oats
- 3/4 C Whole Wheat Pastry Flour
- 1/4 C Ground Flax
- 1 t baking soda
- 1/2 t salt
- 3 small frozen bananas
- 1/4 C Light Agave
- 1 T Coconut Oil
- 1 8oz. container of plain fat free Greek yogurt
Steps:

Make oat flour by putting the oat in a food processor until they are a grainy flour consistency.

Add the oat flour to the whole wheat pastry flour, flax, baking soda and salt.

Put the bananas in the food processor and blend until they are creamy.

Add the Greek yogurt, agave and coconut oil to the banana mixture.

Add the liquid to the dry ingredients and stir until combined.
(I stole a bit of the liquid ingredients for a snack!!!!)

Scoop into greased muffin tins (I used Nature’s Promise Organic Cooking Spray) and cook at 325* for about 20 minutes.

These look so good! Any suggestions for what I can use to sub the coconut oil?
Probably a little canola oil, or whatever oil you bake with. I might add a little vanilla extract or something though.

Oh and PS re: your first spin class from a few posts ago–I think I had a similar first (and only!) experience! I was totally nervous, plus Equinox is such a fancy gym…I dunno I didn’t feel entirely welcome! Plus I do NOT enjoy that hard seat against my hoo-hah. It just doesn’t work for me, no matter how good the burn.

Usually, I do flax + water = egg, but the original recipe did not do that, so either did I.

I’m a big fan of the new Cookling Light… I love that they’ve incorporated more articles / info in addition to the recipes!
If your kids don’t like brushing their teeth, put a dallop of virgin organic coconut oil on their wet toothbrush and let them try that. Works terrific (also for grown people). Outstanding skin care product too (rub on wet skin after shower, then let skin dry (ie brush teeth while you dry), rub off any excess before putting on clothes). Very functional. Though the virgin/extra virgin variety does have a bit of coconut smell, it does not impact taste of meat for example or other meals when you use it for cooking. Try it (organic, extra virgin). You will love it.
