She Says: Easy Eggs on a Monday Night
I am missing my solo short of the Chocolate Peppy-mint Refresh Glo Bar. So sad. I was hesitant to try this because I do not, I repeat do not, like chocolate and peppermint, but alas, I was hungry and there was chocolate involved, so I went for it.
Much to my delight, I could not detect much peppermint at all! What a lucky girl I am.
For dinner I made something quick and simple from one of my favorite cookbooks, Apples for Jam. In Real Meal Challenge style, I cooked up a Zucchini Omelette. Admittedly, Mark is a prettier omelette maker than me, but I did my best. And what this lacks in imagery, it makes up for in taste – simple, yet delicious.
I would also like to add that this meal is super cheap too! Two organic eggs, 1/2 of a zucchini, garlic, basil and a sprinkle of Parmesan Cheese. Eating well does not have to be expensive!
I am trying to fight off a cold, so I am going to try my hardest to get to bed early and load up on vitamin C! Have a great night.

Yum! I love zucchini omelettes!
There are many days I’m glad I’m not on Iron Chef getting points for presentation. Some of my favorite meals would earn a big zero in that category.
I would never have thought to but zucchini in eggs. Such a new concept to me.
I find a good nights sleep is the most overlooked cure for cold prevention. Sleep tight!
Hydration and sleep are the best cold preventions for me!

Sometimes you just need a good omelet. And sometimes you only have the time to throw an omelet together. Either way omelets are a great dinner option.

serve it with bread, or over pasta, or over polenta and some veggies. it’s a perfect meal.

Omlettes look so yummy! I wish I liked eggs, I just… can’t stomach them. At all. All eggs smell and taste rotten to me. I am pretty sure I could do egg whites but I just haven’t tried yet.

Chocolate and peppermint is pretty much my favoritest combo ever – a distant second being chocolate and peanut butter.

LOVE how quick and cheap eggs are! My husband thought he was allergic for years and slowly discovered he wasn’t so now they can be dinner, yay!
