She Says: Trader Joe’s Brownies with Greek Yogurt
My phone is a little warrior. I skidded across the sidewalk and it escaped unscathed, but I guess sometimes enough is enough. Wednesday night I encountered a white screen that would not go away. A quick trip to the apple store and all was well. This morning my phone would not turn on even when I plugged it in. I asked a sleeping Mark whether he could figure out how to turn it on. His response? “Brownies.” I can take a hint.
I stopped at Trader Joe’s today (my Whole Foods employed brother is going to hate me for saying this, but I love TJs!) and picked up a box of brownies to make for him. I love baking from scratch, but for some reason I prefer making cookies, cakes or muffins over brownies. Anyway, keeping my baking audience in mind, I modified the box recipe only slightly.
To the mix I added 2 eggs, 2 T unsalted melted butter. 1 5.3 oz. container of Oikos and 2 eggs. From a textural standpoint, using yogurt in brownies gives them a cakey quality.
I didn’t have any, but Mark liked them a lot and said he didn’t notice the lack of butter. I chose not to have any because I don’t really love brownies and given my recent annoyance with my extra LBs, I’m trying to be extra thoughtful about when I have sweets and desserts and I had my fair share of Halloween treats at our class party today.

Hahahahaha I love how his response to your phone problem was brownies and then you went and made him brownies. You are such a good girlfriend! And omg those brownies look like gooey heaven!

That’s totally something my boyfriend would do. Most of the time he rolls over and ignores me though. Those brownies look awesome! I want one!

Cake-like brownies are my fav! I always wondered if TJ’s brand mix was any good… I can’t seem to find a good homemade brownie recipe, so maybe I’ll give this mix a taste!

I love trader joes and go to Whole Foods for the stuff I can’t get there. For us they are across the street from each other so it is really convenient.

Oh no! Have you tried Tom’s? Of course it’s prob $2 more but we only use a pea sized amount. Actually I can’t really say I know how much Rob uses but I don’t need much. It’s very nice and they have a mango flavor. We only tried that once though. Kinda weird, ya know.

I miss TJ’s like you wouldn’t believe! Sigh. I’ve actually never tried any of their baking mixes, but they def do look good.

That is some willpower you got there for not trying out even a tiny piece of those brownies. Brownies are my downfall too. I usually bake No Pudge, but I might give TJ’s brand a try.

Those brownies look amazing, I was actually looking at those this week. Now I know that they are worth picking up!
