She Says: Pretty Pumpkin Cupcakes
Today Sabrina and her husband completed (they actually trained and started one before, but a disaster occurred 5 minutes in) their first half marathon, and then, as if that wasn’t enough, they hosted a wonderful post-race party at their apartment. Mark and I were happy to make the trip down to Philly to help them celebrate. We were even able to stop by Villanova on our way home! Anyway, both the race (check out her recap) and the party were a huge success.
Taking any excuse to bake and deliver resulting baked goods to someone else, I decided to bring some Pumpkin Cupcakes to the party. First I found this Martha Stewart recipe. Ordinarily I like to try out a recipe before presenting it to a group, but there was no time and no Martha recipe has ever failed me. But later in the day I was looking through the November Cooking Light I was sent to review and I noticed a lightened version of a Pumpkin Cake. It’s this one with the delicious Pecan Pie on the cover!
I knew that if anyone would appreciate some healthier cupcakes it was Sabrina. I ended up combining the two recipes because the Martha Stewart version contained a few spices that I wanted to get in there. Another change is the whole wheat pastry flour that I used. The resulting recipe was simple and the batter was delicious (yes, I lick the spoon). I haven’t tried a cooked one yet, but everyone seemed to enjoy them.
Sabrina took some beautiful pictures of my cupcakes with her fancy camera. I’ve never seen my baked goods looking so cute!
I made half with chocolate chips.

MMmmmmm, wish I was there for Thanksgiving! I made trifles with pumpkin cake, pudding, and cool whip… fabulous.

I totally understand why you’re a vegetarian. I don’t eat meat for the same reasons as you..and also because I don’t really digest it very well. I don’t care if other people eat meat, that’s their perogative, I’m just going to stay away from it. But mmm, I love dairy. Which isn’t good, because I’m lactose intolerant…

OMG i so made up the meal of granola, apple butter, and peanut butter, it was DELICIOUS! Seriously those tastes are soooo good. (I bet apple sauce will do the trick too!)
