She Says: Stonyfield Spa at Home Giveaway

Yogurt. I love it. I eat it daily and bake with it. Recently, I baked Banana Oat Muffins with my favorite Oikos yogurt. I am using that recipe as my official entry into the Stonyfield Spa Vacation Giveaway.

Banana Oat Muffins

Ingredients:

  • 3/4 C Old Fashioned Oats
  • 3/4 C Whole Wheat Pastry Flour
  • 1/4 C Ground Flax
  • 1 t baking soda
  • 1/2 t salt
  • 3 small frozen bananas
  • 1/4 C Light Agave
  • 1 T Coconut Oil
  • 1 8oz. container of Plain Fat Free Oikos

Steps:

  1. Make oat flour by putting the oat in a food processor until they are a grainy flour consistency.
  2. Add the oat flour to the whole wheat pastry flour, flax, baking soda and salt.
  3. Put the bananas in the food processor and blend until they are creamy.
  4. Add the Greek yogurt, agave and coconut oil to the banana mixture.
  5. Add the liquid to the dry ingredients and stir until combined.
  6. Scoop into greased muffin tins (I used Nature’s Promise Organic Cooking Spray) and cook at 325* for about 20 minutes.

    I like to put on a yoga dvd and then sip some warm green tea after wards. That always takes the stress away or a good workout after work.

    I do an inversion – headstand, handstand, forearm stand or downdog depending on the kind of stress. I find being upside-down is a real perspective-changer (in many ways!) and therefore a good de-stressor!

    When we had our condo built, I asked for a beautiful big bathroom with a jacuzzi and got it :) So I love taking long bubble baths with a glass of sparkling water and a glass of wine, staring into space and thinking of nothing!

    Nice! Typically my de-stressor is going for a run, but since I spent Sept. 22nd to Nov. 9th on the DL, I had to find new venues! Nothing even came close to matching what running does for me, but I have definitely upped my swimming and biking. Non-physical-activity-related, I really good at cooking fried rice and egg rolls. :)

    It may sound weird, but to de-stress I sometimes like to watch tv or read blogs. It just allows me to turn my brain off and enjoy something I love. Some warm tea often helps too :D

    To destress, I love yoga (when I can wrap my brain around it). In the summer, it’s sitting on my deck listening to nothing but the outdoors, reading a book and sipping my tea. And oddly enough, my biggest stress release is grocery shopping…
