She Says: The Rest of the Day

After the gym I was able to come home and cook dinner before going to yoga at 6:15. Last night I started by roasting a head of cauliflower with curry powder and coriander.  Tonight I completed the cooking process creating a Cauliflower Chickpea & Quinoa dinner.

  • I roasted chickpeas (and had a handful in the process)

  • Cooked quinoa
  • Added some curry powder, cumin, coriander and a shake of salt.
  • Added 1 T of olive oil
  • Added frozen spinach
  • Added some cooked onions
  • Added some raisins.

Mine is on the right, Mark’s is on the left and includes hummus.

I also had two Super Charge Me Cookies I made the other day.

The key to delicious Super Charge Me Cookies is nut butter with salt. These were made with no salt added peanut butter and were not as delicious.

And a Vitamin Water.

Mark also says I need to show this Life Saver I had.

The rest of Mark’s day…

He came home while I was at yoga and had a grilled cheese with Colby cheese.

While I was finishing up the cooking he had a half of a Power Bar.

And he added Tortilla Chips and wine to his dinner.

And that’s it for Day 1!

  4. I like the sound of quinoa with raisins! I saw someone with Vitamin Water Zero today and I definitely want to try it the next time I see it. PS I love how you and Mark have opposite sized bowls of the salad and quinoa.

    If today is any indication of a typical day Mark (and PB) need more substantial meals! PB often eats 2 bars in a day just to hold him over between meals. I wonder if there is a way to help them bulk up their meals so they don’t need the bars? Unless Mark loves them? PB kind of likes his but he also wishes he didn’t need them sometimes.

    Not to take away from you at all…cause I love you and your eats are great, but I’m totally impressed with Mark’s eats today! I’m sure there will be down days too, but wow…he does pretty great!

  8. Just catching up with your food diary project, and wow–I see it caused some debate initially! You are brave to post all your eats (though cowardice is the LAST thing I would ever accuse you of in particular! :D ). It’s never been something I had the balls to do, but I bet it’s interesting to, no? I would imagine it gives you some new perspective on everything that goes into your belly in a day.

    Wow, did Mark eat 3 power bars in one day? I haven’t actually ever tried one and now I might…but still, he might want to think about grabbing an apple or something once in a while instead. Clearly he was having a busy day where he didn’t have a lot of options without a lot of previous planning/packing.

    Thanks for showing your whole day, it is always interesting to see.

    Allison: He had one late Sunday night/v. early Monday morning (like 1 AM), one Monday mid-day (he only had the one even though it was pictured twice) and 1/2 before dinner.

  17. YUM! I love quinoa and chickpeas. I think they are a match made in heaven. Have you tried adding peanuts to that dish? I love it with peanuts…especially when you re-warm everything up and they get kind of soft and extra-nutty tasting :)
