She Says: Yesterday’s Salad and Running

I didn’t get to post my running or salad last night because I wanted to get the word out about our

Anyway, yesterday, as I predicted, I was not feeling the speed work. Instead, I ran 5 miles and did some stretching. I guess speed is not my thing.

Salad Challenge Day 3: Taco Salad

Mark and I each had a Taco Salad for the third day of Leng’s Salad Challenge. This was a fun, delicious and easy salad to make. I think two things really made it excellent: (1) salsa; and (2) lime juice squeezed on top – both added a ton of flavor and made the salad more exciting than the average salad. I had fun.

My Salad

  • Lettuce
  • Black Beans
  • Corn
  • Sauteed Onions
  • Shredded Cheddar Cheese
  • Tomatoes
  • Black Bean and Corn Salsa
  • Lime Juice squeezed on top (I stole this idea from Leng)

Mark’s Salad (Mark’s first two days of the challenge were excellent).

  • Same as mine, but also has ground turkey cooked with taco seasoning.

We also had some chips and salsa. This is Black Bean & Corn Salsa from the Stop & Shop Simply Enjoy line. It was very tomatoey and a little spicy. I loved the flavor, but I do prefer a chunkier salsa for chip dunking purposes.

For dessert I had a Peach Chobani.

I think its official – I have been spoiled by Greek Yogurt and there’s no turning back!

Yesterday was also Day 3 of my Break the Habit Challenge and … no nail biting. Woo hoo!

She Says: Hunting Traditions

Happy Friday everyone! I just got back from the gym where I ellipticized. Today was a rest day, but because I am traveling home tomorrow I did a rest/cross switcheroo.

I originally planned to come home to do some J.M. Shred Moves, but am postponing that in favor of food and blogs. I had a Blueberry Chobani with ground flax, of course. You should really try adding flax to yogurt. It almost gives it a crushed Graham Cracker feel.

I like the flavor of this yogurt, but did not like the blueberries as evidenced in this photo.

Then I had a nice powerful salad with Chick Peas, Edamame and Broccoli. It was a lot of beans and I liked it.

So, Easter is coming. For me this means memories of Cadbury Cream Eggs, Ricotta Pie, Easter Baskets and a new dress. We had plastic eggs outside that were filled with little things. Inside we had Cadbury Cream Eggs and Resses’ Eggs. Never have I ever heard of hiding real eggs, but I just found out my friend was considering this option for her son’s hunt this year! We color eggs, but just put them in a basket on the table.
