She Says: If it Ain’t Broke

Hi Guys!

Well, I am subbing again today and since I felt like yesterday’s meals really kept me full and energized, today’s will be somewhat repetitive.

For breakfast this morning I had another delicious and powerFILL bowl of oats, which is almost an exact replica of yesterday’s.

  • 1/3 C Oats
  • An unmeasured amount of soy milk. (I guess 1 Cup)
  • A big dollop of peanut butter (probably 2T)

    After the picture I added another dash of Hangry Management Muesli for some extra crunch.

    For lunch I packed an orange and a mish-mosh salad.

    • Steamed Asparagus
    • Tomatoes
    • Chick Peas
    • Kidney Beans
    • Balsamic Vinegar

    I also packed an English Muffin, but because I think I may have gotten out of control with the nut butters (I had it on three separate occasions yesterday), I opted for some hummus instead (I compensated by adding more peanut butter than usual to my breakfast). This is the last of the Roasted Garlic Hummus from my Trader Joe’s Hummus Quartret. I am sure it’s not surprising, given my love for the stink that is garlic, to know this was the first of the four flavors I finished.

    Guess what? I have a job interview this afternoon! It’s for a long term sub. position for a teacher going on maternity leave next year! Obviously, it’s only for next year, but it’s something! It’s at the school where I work at After Care and sub. sometimes now – the one that is literally steps from my house, so obviously it would be super convenient. Wish me luck bloggies!!!!

    Question: I am reading Bethenny Frankel’s Naturally Thin and am wondering  – what does “thin” mean to you? It’s something that I keep asking myself as I read and that I want to discuss when I write about the book.

    She Says: Full for Hours

    Good morning! I hope the sun is shining where you are!

    I received a call early this morning asking me to substitute in the first grade, so that is where I am today. There is a student teacher in the room, which means I am more like an aide to her. It might seem easy peasy, and it probably will be, but it also means the time passes by quite slowly. I prefer being hands on and busy when teaching – the time just flies by!

    I knew I wanted something that would keep me full for a long time, so I went with oats of course! In today’s bowl is:

    This was delicious and is sure to keep me full for 4+ hours! Oats is amazing that way.

    Is there a breakfast better than a warm bowl of oats? I think not.

    I packed my lunch and after school snack as well.

    • Salad with a ton of kidney beans, some tomatoes, corn on the cob and salsa dressing.

    For my after school/before After Care snack I packed an English Muffin and peanut butter. This is pretty substantial, so I am not sure I’ll eat the whole English Muffin. Don’t want to spoil dinner!

    Simple Strength

    On my revised schedule today is a strength and stretch day. Stretch is easy – some nice yoga will do the trick. Strength is something I totally skimp on. The only thing I’ve been able to stick to doing is various combinations of the 30 Minute Shred video. Other than that, I really am more of a yoga person at heart.
