She Said: V. Excited to Share

Today I feel like one of the children in school who are always excited to share stories or trinkets from home with the class. Today I am excited to share a special part of my lunch that I made last night. 

Hummus, Cucumber, Dried Cranberries and Lettuce on a Whole Wheat Flax Wrap

It’s hummus, cucumbers, lettuce, these very delicious dried cranberries and a flax whole wheat wrap

Kinda boring at first glance, but there are two very exciting things about this sandwich.

First, the dried cranberries I received from Oh! Nuts. Because excitement is the theme of the day, let’s just say I was v. excited about these super plump and soft dried cranberries.

Second, I made that wrap! It was so easy and everyone can do it. I used this recipe for Picnic Wraps from a King Arthur Flour Cookbook, but used whole wheat flour and olive oil and added ground flax. Best part is that if you make it yourself, you know there is no HFCS in there! 

Here is the hot pocket I made for my dad’s lunch using two of the wheat wraps.
