Lots of Blue!

I can’t believe my very first half marathon is almost here!!! I know lots of bloggers (including Melissa, Sarah, Ashley, Sara and Steph ) and readers (Betsy, Helene & Megan) are running the Brooklyn Half Marathon tomorrow, so I wanted to show everyone what I would be wearing so you can come say hi, and of course Good Luck to Everyone!!!

  • Something Old: My running shorts. Mark tells me they make me look like a wrestler from the 80s, but I like wearing them because they remind me of when I first started running and pretty much hated it.
  • Something New: My new sweat wicking shirt I got a couple weeks ago when I realized the cotton tanks weren’t cutting it anymore.
  • Something Borrowed: Dinosaur iPod shuffle (not pictured).
  • Lots of Blue: Shorts, Hat, HRM, Sunblock, Sharks (which I “wear’” in my sports bra) & Sneaks.

So, if you see me say hi!!!!

I will admit that I was pretty nervous earlier tonight! It is my first half marathon after all! My stomach was really unsettled and I could barely eat dinner, but I knew it was important.

I had a little stir-fry with peppers, broccoli, string beans and tofu (ironic, yes, but I have lots to use up). I added a teensy amount of low sodium soy sauce because I did not want to get all bloated and dehydrated, Dijon mustard, rice vinegar. sesame oil at the end and red pepper flakes. I had it with rice and salad featuring broccoli, Dijon + apple cider vinegar. I’ve also had a ton of water!

Now I am just making sure I have all my stuff and trying to relax. I hope I get some sleep! Mark is going to try to stream some of the race and post it during the race, so come back and see if it works! Also, my mom, dad and aunt are also going to be there cheering me on, but I don’t get how they are supposed to see me. How do they get from the middle of the race to the end? Do they just walk? Any guidance on coordinating spectators would be awesome.

Oh and v. exciting for me. Tomorrow morning I am guest posting on Kath Eats. I made a video and will reveal recipes for these two delicious Whole Grain Salads I recently made.

She Says: Almonds All Around

The other day I read that Sabrina (RhodeyGirl) went to the new Great Harvest in Cranston. I had no idea it was coming to Rhode Island, and knew I had to try it out for myself right away. Did you know they give free pieces of bread away? And not in the “Oh, there’s some bread lying on a plate on that table, let me try it.” No, no. They pretty much take your bread sample order and they have out little dips and spreads to use! I tried the High 5 Fiber bread.

It was so delicious! Soft, wheaty goodness. My mom bought a loaf, so I guess the sampling works! She also got this contained of Monastery Creamed Honey in almond flavor. Ingredients: Honey + almond extract. It’s good when it’s soft and a little warm, but it’s very sweet and strong, so you really only need a little tiny bit. 

 

For dinner I wanted to make a stir fry, so I used a bag of Whole Foods Thai Stir Fry vegetables + leftover corn + baked tofu to get started. I wanted to make a new stir fry sauce so I made an Almond Ginger Sauce consisting of:

  • Low Sodium Soy Sauce
  • Sesame Oil
  • Rice Wine Vinegar
  • Dijon Mustard 
  • Ground Ginger
  • Red Pepper Flakes
  • Almond Butter
I tossed it all with sliced almonds and buckwheat noodles. It was spicy and delicious! I usually use peanut butter in sauces like this, but I’ve been curious about cooking with almond butter and gave it a try. loved the subtle flavor of the almond butter, too. 

I had more bread + Creamed (Almond) Honey  for dessert. 

Query: I have a sample of coconut milk from the 5K I ran in. I want to bake something with it. Any ideas?
