She Says: Peanut Butter Pumpkin Blondies

I’ve been trying to make blondies for awhile now. They’ve been coming sort of more cakey than I would like. Last night, however, I had an idea for these pumpkin and peanut butter blondies so I got to work. They come closer to the dense, chewy blondies I like, but with a little less butter and sugar than other recipes I’ve tried.

Peanut Butter Pumpkin Blondies

Ingredients

  • 1 stick of unsalted butter
  • 3/4 cups light brown sugar
  • 1 cup unsalted natural peanut butter (I used Teddie’s Creamy)
  • 1 cup canned pumpkin
  • 2 egg whites
  • 2 t vanilla
  • 2 cups whole wheat pastry flour
  • 1/2 t baking powder
  • 1 tea pumpkin pie spice
  • 1 cup white chocolate chips
Directions
  1. Cream the butter (at room temperature) and brown sugar.

  2. Combine the pumpkin, peanut butter, egg whites and vanilla.

  3. Whisk the flour, baking powder and pumpkin pie spices.

  4. Add the butter and sugar mix to the pumpkin/peanut butter mix. Stir until combined.

  5. Add that to to the flour mix.
  6. Stir in the white chocolate chips. 

    Almost mixed together...

  7. Pour batter into a baking dish that has been sprayed our buttered. 

    Pre-baked.

    Before going into the oven.

  8. Bake at 350* for approximately 30-40 minutes.
  9. Try to contain yourself and cut them after they are completely cool.
