Hi Everyone. Did you have a nice Monday? Mine was fab. Although, I am completely disturbed by the weather and sad because it’s my last week with the kiddies.

So, I wanted to chat about a couple of things.

I say “Ontie.” I highly recommend it.

Since you asked, I am moving to the northern part of New Jersey, although I hope to be able to visit Philadelphia on occasion. I would love to meet all you gorgeous girls here, there or anywhere!

I was in a running funk last week, but I think I figured out what I needed. Yoga. Duh. I love yoga and wish I could pay to go to yoga every day. I miss yoga and Yoga Today wasn’t doing it for me anymore. Their recent classes just weren’t as challenging like the classes in the summer. It was hard to pay attention for an hour. So, after chatting with Maggie, I tried Yoga Download. After running yesterday I tried the Detox Yoga – Detox Challenge Flow.

It was short enough to keep me interested (which is hard because there’s no visual) and long enough to give me a good stretch. It left me wanting to try another class, which I hope to do today. I am not sore or anything today, but it was perfect for its purpose. I am a Yoga Download convert!!!

Before I ran, I grabbed a handful of Barbara’s Shredded Spoonfuls. I never weigh or measure things like this. I feel like I would be disappointed/discouraged if I knew this sort of numeric information. Today, however, I wanted to see.

The Blogger Secret Ingredient this week is carrots. Yeah Catherine! I love carrots and eat them almost every day. If you eat the baby carrots, I highly suggest getting whole ones and cutting them. It is seriously worth the 10 seconds it takes to clean and chop.

I am hoping to come up with something else for carrots, but for now, I am submitting an updated version of Carrot Cake Cookies. Updated intentionally to use some stray ingredients, and unintentionally because I’m me. I omitted the chocolate chips and added walnuts and coconut. I also made a little cream cheese frosting. Unintentionally, I forgot to add the butter! I took it out, softened it and totally forgot to add it, but they were delicious anyway!!!!! Here is the modified recipe (almost halved from the original).

Ingredients

  • 1 cups shredded carrots
  • 1 cup shredded coconut
  • 1/4 cup chopped walnuts
  • 2 egg whites
  • 1/2 cup light brown sugar
  • 1 t vanilla
  • 1/2 T cinnamon
  • 1 cups whole wheat pasty flour
  • 1/2 cup old fashioned oats
  • 1/2 t baking soda

Frosting

  • 2 T 1/3 reduced fat cream cheese (soft)
  • 2 T FF Greek Yogurt
  • 1 T Brown Sugar
  • coconut for dusting

Steps

After I peeled and shred the carrots, I combined them with the coconut and walnuts. Then I creamed the brown sugar, egg whites, vanilla and cinnamon. Then I added the carrot mix to the brown sugar/eggs. In a third bowl I mixed the flour, oats and baking soda. Then I added the dry mix to the wet mix. I baked them at 350* for about 15 minutes.

To prepare the frosting I just mashed with a spoon the Greek Yogurt, cream cheese and brown sugar. I frosted the cookies after they were cool and sprinkled coconut on top. I only frosted about half the cookies, so you might need to make more frosting!

I can’t say I’ve ever made these for Christmas, but the coconut topping makes them look like snow mountains and I say they are holiday festive.

Now, only in R.I. does this happen: I grew up in Providence, but my parents moved about 25 minutes away when I was in college. Now 25 minutes could very well be a different state as far as R.I. is concerned. Interestingly, I do my student teaching in Providence approximately a quarter of a miler from where I grew up.

It’s a laboratory school, so the kids are not necessarily from the neighborhood or from Providence at all. Anyway, yesterday I was typing up a student’s “About the Author” page for books they’re publishing and, being a 2nd grader, she decided her full address was an important part of herself. Low and behold … she lives in my house!

How crazy is that? She’s the cutest thing who once said she wanted to paint everything pink, even the white house and the girl who I’ve mentioned who always brings 100 cal. packs of guac for a snack each day. I couldn’t think of a better person to live in my house. I am convinced that things like this only happen in the Ocean State
