She Says: Peanut Butter Pumpkin Blondies
I’ve been trying to make blondies for awhile now. They’ve been coming sort of more cakey than I would like. Last night, however, I had an idea for these pumpkin and peanut butter blondies so I got to work. They come closer to the dense, chewy blondies I like, but with a little less butter and sugar than other recipes I’ve tried.
Peanut Butter Pumpkin Blondies
Ingredients
- 1 stick of unsalted butter
- 3/4 cups light brown sugar
- 1 cup unsalted natural peanut butter (I used Teddie’s Creamy)
- 1 cup canned pumpkin
- 2 egg whites
- 2 t vanilla
- 2 cups whole wheat pastry flour
- 1/2 t baking powder
- 1 tea pumpkin pie spice
- 1 cup white chocolate chips
Directions
- Cream the butter (at room temperature) and brown sugar.
- Combine the pumpkin, peanut butter, egg whites and vanilla.
- Whisk the flour, baking powder and pumpkin pie spices.
- Add the butter and sugar mix to the pumpkin/peanut butter mix. Stir until combined.
- Add that to to the flour mix.
- Stir in the white chocolate chips.
- Pour batter into a baking dish that has been sprayed our buttered.
- Bake at 350* for approximately 30-40 minutes.
- Try to contain yourself and cut them after they are completely cool.

As soon as I saw the title, I knew this would be something I’d like haha Pumpkin + PB = holy deliciousness!
Question about the Dr. Praeger’s from last night…do they taste meaty? I want to try them but I’m tired of trying “burgers” that try to taste like real meat. Sorry if that doesn’t make sense

I LOVE pumpkin and PB. I’ve actually been known to stir them together with a bit of honey and eat the mush with a spoon. It’s awesome and those look awesome too.

i’m relieved to learn i am not the only one who likes pumpkin and peanut butter together — one of my earliest “signature” recipes (as a teenager!) was pumpkin bread with peanut butter chips. sounds strange but tasted delicious. Hmmm….i still have that recipe in an old recipe box somewhere….
