Hooray for Monday! I am in an extra good mood today. I know it makes me odd, but I love the rain, and today we have a grey and rainy day. Fantastic! The highlight of my weekend was my trip to The Melting Pot, but I did a lot of other great stuff too.

She Says: PBH For PBE

Hooray for Monday! I am in an extra good mood today. I know it makes me odd, but I love the rain, and today we have a grey and rainy day. Fantastic!

The highlight of my weekend was my trip to The Melting Pot, but I did a lot of other great stuff too.

First Let Me Cover My Half Marathon Training.

Saturday: Cross Training – 45 minutes of ellipticizing + 20-minute Detox Yoga Download. I also did 3 man pushups, which was an accomplishment for me.

Sunday: Post Fondue & Day Light Savings – 10 miles on the treadmill at my mom and dad’s house. This was notable because (1) it’s only the second time I’ve run that far; (2) it was my first time experimenting w/ mid-run snacks. About an hour in I had a handful of dried cranberries.

I didn’t really notice anything about this experience. I thought it was a little weird to be chewing and running, but that’s about it. Around mile 7 I had to get off to go to the bathroom—terrible idea. The last 3 miles were a pain. I finished in about 84 minutes!

Then There Was Food

I didn’t get to adequately stretch because I had to meet my family at Bagelz. At Bagelz, I had a Spinach Bagel w/ Red Pepper Hummus, Lettuce, and tomato.

On the drive back to New Jersey, I thought about my yummy bagel and was eventually inspired to create my entry into The Great Peanut Butter Exhibition #5 – Sandwich.

I call it PB & H. Can you guess the “H?”

  • 1 Wrap or Pita – I used an Arnold’s Sandwich Thin
  • 1.5 T Teddie’s Unsalted Peanut Butter on one half of the bread
  • Sliced MacCoun (but any would work) Apples on top of the PB
  • 1.5 T Garlic Hummus (or any flavor, really) on the other half of the bread
  • Handful of Sprouts on top of the hummus.
  • Put altogether!

It might sound like a weird combination, but it was really good! The hummus goes well with apples, and apples go well with peanut butter. The sprouts provide a little crunch. Give it a try!
